Caroline & Gabriele compare two Taiwanese oolongs made with the same cultivar, from the same year: Dong Ding & Ali Shan. Each comes from a different (eponymous) mountain in Nantou, Taiwan, and one is more roasted than the other, making this an ideal horizontal tasting to compare how terroir and processing affect the flavour, and what teas of the same cultivar have in common.
