cream of tartar might work, so does honey but honey doesn't work as good as cream of tartar, and even if you use cream of tartar it might still crystalize, I suggest you do use corn syrup considering how good it is at preventing crystallization, if you're worrying about gaining weight just don't eat it multiple times a month, only once every 1-2 months

Everyone else I've seen that makes the candy apples, let the apples sit overnight to make sure all the crystallized oxidation takes place, so there won't be bubbles in the candy part
