Just season it like you would any other cast iron utensil. Wash with soap and water. Apply thin coat of vegetable oil with a rag or paper towel. Pop in the oven for an hour at 350F or 180C. Now you have a natural nonstick surface of polymerized oil that will protect the iron from rusting, and protect your food from the iron (too much isn't food for you).

Wash and dry and crumbled newspaper. Works perfectly. Like he said, the oil coating gets sticky and hard. Thanks Oom.

Thank you for your instructions! I usually use coconut fat for my cast irons. For my skillets but also teh potjies. Advantage of coconut fat is that it will not get sticky over time and will not be ranse (cheesy, smelly). After use I rub the pot with cold water, I wipe it out with old cloth, I replace it on the fire to be surely dried, then I use a baking brush and brush it with coconut fat. I have many sizes of potjies so some of them are inactive for longer periods (year) but they are always fine. Having said this, the rice idea sounds very useful also! Thanks and have great meals and fun!!

if I use potjie very often like many times in a week, I can use Mr. Kruger's method. But if I don't use it often, like once a month or only in a 2 months, then I will suggest to wash the potjie with hot water throughly, put it to the oven for about 5 minutes to make sure it is dried and slightly hot, take it out of oven and apply a very thin layer of seed oil inside and outside. And after that you will need to put the potjie back to the oven again, upside down the potjie, bake the potjie for about 1 hour, make sure the oven temperature is at least 20-30 degree celsius higher than seed oil's smoking point. Remember to open all your windows because it will be very smoky by doing this "seasoning" procedure. After 1 hour later, switch off the oven and leave it to cool down naturally inside the oven. The potjie will not rust even after 6 months. Because it is properly seasoned. You will need to do this procedure every time you use the cast iron, unless your cast iron skillet or potjie is enamalled or it is properly seasoned.

Hi Ben. Can you please tell me what quantity of rice that I should put in my potjie? In your video it looks like you used about a cup of rice. I just wanted to make sure. Thanks in advance.

I've only once washed my pot out with dish washing soap, after that I just scrub it with hot water and oil it after. I've heard washing it with soap is only done once for the poitjie pots and that's when you buy it off the shelf. Anyone else do this?

A new pot gets washed with soap and water. Once it is seasoned, NEVER use soap on it again.

When you say that the pot is seen all over Africa.......It is not available in Kenya ...Not even in Tanzania nor Uganda.

Rubbish man! Never wash with soap. You’re putting too much oil in the pot if it goes rancid. Just a thin layer to season it. If you use soap, you’re ruining the seasoning process.
