Use paprika powder/ Kashmiri chili powder for the color,its just for color no spiciness at all,gives off redder color which can be the same color you got here or make it darken by roasting the powder before adding.

I feel like there's something to add to the marinade besides food coloring that could be interesting add color and add a greater depth of flavor. Maybe like a dark red cooking wine, or if that'd throw things off like roasted beet juice with a dash of a dark umami booster to balance it out like worcestershire or a mushroom bouillon

Looks amazing but another thing you should is when the chicken is on the flame and being cooked after a few minutes take a bit of any of kind of oil and just gently brush it on each side before turning. This amplifies the flavour.
If you use kashmiri red chili powder or degi mirch you won't have to add color. Second mistake tandoori chicken always have 2 marinations. First marination is of salt, giner garlic paste and a bit of lemon juice to make it tender.
