I made these for a dinner party and got rave reviews and requests for the recipe! I used pecan flour instead of almond flour for the crust (can't do almond flour) and this was great. At the end of the recipe, I avoided the sinking by cracking the oven door a bit and allowed the cheesecakes to cool down for half an hour--and voila', no sinking. Sarah, thanks so much for this recipe! It brought us out of winter into a bit of spring!
I have found that if you place cheesecake pan in a larger baking pan with water. This will prevent sinking. Place larger baking pan in oven the add some water then place cheeze cake pan...I watched you videos most of this afternoon...WOW! GREAT !!!

I'll definitely be trying this one! I hope you don't mind a few tips. A shot glass with a flat bottom works well for flattening the crusts into the mini pans - either spray a little cooking spray or use a small strip of parchment to press in in. When juicing any citrus if it is cold microwave for 10-15 seconds and use a fork to twist and squeeze the fruit over the strainer - maybe a cocktail fork for those tiny key limes - you'll get up to 50% more juice. And my last comment is about the falling cheese cakes - beat the egg lightly with a fork before adding it and then mix just to combine - the more you beat the more air you mix in and the more likely it is to fall. Although the other thing - that really can't be prevented with the minis - is the change in temp when they come out of the oven can contribute to the falling. But if they fall I'll be happy to take mine with extra whipped cream!!!!! Thanks for another great video. A Happy , Healthy New Year to my favorite Keto couple and your family.
Thanks for the tips. The recipe I made this from was not a ketogenic recipe… Been reading through the comments at least 75% of the people who made it had the collapsing thing… Mine had started to collapse while still in the oven. I will try the egg separately idea. But on the plus side the concave made it ideal for decorating LOL. I had no problem straining my key limes personally they were plenty juicy… And the sieve made it ideal for the seeds! Happy new year!🎆

I made this today in a pie plate. My family and I loved it. I added a little bit of sugar free lime jello just to give it a hint of colour. It was so creamy with some tanginess. It’s the best dessert so far. Thanks for sharing.

Really hard to try to get over the winter blues heading into spring. One day it will be 65 and the next day it will be 35. Yep! That’s what we did. They are so adorable… When the kids came back from visiting Grandma they wanted to eat the last two. But I promised my daughter I would make them for her birthday. Winco is really the only place I've seen them. Used to shop the Everett store. I was in the Ogden store a couple of months ago and snagged two bags. I have enough left for one more full-sized cheesecake. I am waiting for the craving to overtake me....

Will you guys please consider putting the ingredients and directions to the recipes down in the descriptions of your videos? I ask because it's a pain to go back on a video that one may like and want to do for themselves only to have to fish through the video by fast forwarding or rewinding it to each new ingredient or step to write it down for yourself. It would so much easier just to scroll down to the description and copy the recipe from there. Thanks

I understand that you may want people to traffic your website but having to go to the web and look up your specific website then find that one specific recipe that a person wants is more effort then the ease of scrolling below it's video and having everything right there. There are many food youtube channels that put the recipe and directions in their description and I can say that I personally frequent those channels more often. You do have a great channel just some food for thought.
