Use the same bread flour that you are using for the dough, the gluten content isn't so important as it gets cooked to create the paste that holds a higher hydration. Let me know how you get on with the recipe.
@@londonchef thank you for a speedy reply 👍 will definitely be trying these. I did make hot cross buns over easter and even though they were very nice, they still were not as fluffy and light as I had wanted, they also were a bit on the solid side after just one day (the badgers got the ones we didn't want!). If you have any other recipes and tips on bread/dough using the tangzhong method i would be most grateful. It would also be very helpful to see them in a step by step guide here on RU-vid.
