You've probably had seaweed, but have you ever tried riverweed? In this episode we travel to a mountainous area in Phrae province, northern Thailand, where a little known riverweed called 'Tao' is cultivated by local farmers in pristine freshwater pools. Nym samples a spicy riverweed salad before challenging Chef Kenji to create his own Japanese-style recipe at his restaurant in Bangkok.
