Good try but as a Jamaican, I can tell you that's not how we do it. You need vinegar, scotch bonnet pepper, sweet peppers, onion, and pimento. You use the vinegar to cook the vegetables in a pot with the scotch bonnets. This is how you pickle it quickly for maybe 8 minutes and then put it on top of the fried fish.
