In India too,we eat the roasted jackfruit's seed.Everyone has a different pov abt India.But in northeast Nagaland,tribal people resides and we live simple life like the Africans.If u want to know more abt Nagaland,u can Google it !!
They used to restrict us from roasting jackfruit seeds because they sometimes burst and can cause injuries to our bodies. So our parents used to not allow us burn those seeds.. Jackfruit seeds have less importance in uganda apart from throwing them to germinate and produce new trees.
texture: like Cantaloupe but more rubbery. rubbery like a underipe mix of that cantaloupe, banana skin (outside) and gum. and the flavor is a mix of cantaloupe, papaya and bubblegum. the seed can be roasted too.

last year in uae, we bought a jackfruit which was imported from Uganda. i didn’t ever know uganda produce jackfruit. And also a surprise for me that, it’s taste was almost similar my country Bangladesh's jackfruit
