This video is about a challenge to find a way to make a cheap steak tender and also having a nice crisp sear. Did I crack the code? Will a steak ever be made the same again? So, I guess it's lactic acid that's tenderizing? I suppose you could use sour milk if you're rinsing it off anyway.

Happy I stumbled on this video while researching good tenderizers for steak without messing with the flavor. Sour cream seems to be the best out of all, I love my steaks really charred medium rare so def trying the mayonnaise crust trick. I am going to further experiment with doing this then freezing the steak before cast iron for more time to sear. Ideally i would think the results would be thick bark/crust while still having the tenderized meat from the sour cream marinade. Hopefully it'll be mind blowing!

Chef D, how long was the sour cream on your steak? I'm thinking about tenderizing fajitas/skirt steak with the method you used. Is there a formula meat thickness to amount of time to tenderize the meat? Great video by the way and thanks for sharing. Keep 'em coming.

Sorry I’m late. I did it for an hour. No more than an hour. If anything over that it can get mushy.

Put a damp kitchen towel under your chopping board and it will not slide around, also cut the steak on the diagonal, all in all looks great

You totally skipped the most important part, the final analysis. All you said is that it tastes good. Well, did the mayo make any difference? Did the sour cream make any difference? Are you gonna do either of those from now on? All set up, and no results!

I’m sorry, you’re right! I’m still learning with recording adding all the details. This did work great! It was tender (even though it was a super cheap not very marbled steak) and crunchy from the mayo. No taste of mayo at all and I definitely recommend this for sure! Thanks for letting me know! I would recommend this and do it again!

It makes it tender for sure, but the danger is if you leave it too long it makes it hard to get a good sear and can almost make it mushy, so no longer than an hour with sour cream. Give it a try!

Put a wet towel under your cutting board and the board wont move around and avoid accidents. Great tip with the mayo n sour cream tho. Cheers

Wet a paper towel and put on the counter top and then place your cutting board on top so it won't slide around.

Sour cream is the best for tenderizing meat. Why it's not promoted and used more I don't know lol. Maybe folks think it's their little secret and don't wanna share. Like msg lol

Polyethylene plastic, which is typically used to make these bags, will start to soften at about 195 degrees Fahrenheit (90.6 degrees Celsius). If you put them in boiling water (around 212 degrees F or 100 degrees C), they will melt. But the Sous vide doesn’t get that hot.

Anal Cavity the first steak was intended to be more done as stated in the video. Watch from 7:20 on and tell me that’s overcooked. There were 2 steaks cooked sir. Check it out
