Since many had comments under the Pineapple wine video: • Homemade PINEAPPLE WIN... that it was similar to Tepache, a Mexican fermented drink, today we prepare Tepache together so we can understand the difference between wine and fermented drink.
You will need:
Pineapple 🍍 1
Black Pepper 5 grains
Clove 1
Cinnamon 1 stick
Water 700ml
Muscovado sugar 70 g

cuore, if you let it ferment for longer, it will become pineapple vinegar, which is very stable for multiple years. it is very useful as a source of live yeast and for whatever else you would use a slightly sweet vinegar for

Ok so that's what has happened to mine. It has a vinegar smell and taste. It's not something I would drink but maybe I can use it foe something else. I was thinking about dumping it but didn't want to. Any suggestions for usage?

Andrea, this was my first fermented beverage almost 3 years ago. It's really good, I use swing cap bottles to push the bubbles to the level of a very sparkling beer.

I used to watch a cooking show called Daisy Cooks on our PBS network here in the US. It was hosted by Daisy Martinez, an accomplished American chef of Puerto Rican descent. She made something similar with pineapple peel and added the liquid to many dishes. I don't remember if she drank the liquid, I watched the show many years ago. I wonder if they do the same thing in Spain because of their influence on these other cultures and countries. That's why I love this channel, It makes me think of two of my favorite things - food and drink. Thank you!

Hello. The foam stays because of protein/enzyme in the mixture. I have a book on beer making and for poor head (foam) retention cause: High surface tension due to low protein grain, or detergent residue in bottles, or grease. Remedy: Increase malt content, use wheat malt or 'heading compound'. probably means wheat gluten (protein.) I am trying the gorgonzola spread for the third time today. Does the water bath get reheated after the first step? Does the milk mixture need to come up to 40C or just the water? my room temperature is 80F day and 68F at night. Do I need to do anything with the water temperature?

So it relies solely on wild yeasts/lactobacillus? I grow a lot of pineapples, so I will try this in a few days. The only use for the skins I have tried is boiling them with water and sugar and drinking it as a fresh juice.

Im not sure what I did wrong but it did not start fermentation until the second day I was going to wait two more days but it did not work out :( maybe it was the store bought pine apple I live in the USA and most food is fake here 😢

I guess I'm lucky. Here in Florida, they're cheap and big, less than $1.50 (less than €1,30). Often, they're on sale for $0.99. Literally last weekend, I saw them in Aldi for $1.29. I also plant the top part (FL is warm), but I've only gotten small pineapples.

Haha, here in Russia it costs 7 euros for 2kg pineapple. And it’s from Carribean. 7 euros = 2 cans of craft tepache here, or 3 bottles of Schneider weisse tap 1. Not so cheap, but not expensive. And yes, we are under pressure of politics etc 😂

@@HillHyker We also use rubber ring terminology, generally when using rubber ring in local vernacular it is as a seal that is either fitting around a rod that has an inset groove machined in, or inset on the interior side of a tube which also has a machined groove. But on flat matching surfaces we mostly use gasket as the term.

I like tepache ! it's very good! i would like to share my recipe with you. it's some kind of sparkling wine made with star anise , it's very refreshing , had a strong taste of anise and flowers. i put 400gr of star anise and 600gr of sugar in 3 liters of water, i cook it 3 or 4 hours at high temperatures , but for the "cooking" part it's up to you, when i made this wine, i don't watch the time and the temperature of the water carefoully. after that i let the water temperature cool down , next i put the water WITH the star anise in the fermenter, i add a bit of champagne yeast and then you know the story :D once the fermentation is over i put in bottles , add a bit of sugar for more sparkling and i wait a week more or less before the tasting . up to you to try it and add some adjustment ;)
