Have you considered doing the Sorted Food teams Sub 10 minute burger challenge? I know it would be hard getting to their studio in London, but maybe a unofficial one on your channel, with Mrs B as the Quiz Master might be fun.
A smash burger is meant to be smashed into the pan using a metal spatula or weight until its ultra thin. The smashing causes it to crisp up more as the meat compresses against the hot pan.
You are right about the smash burger. I think maybe cook the burger first (using the smash burger technique) then add the tortilla and cheese? Not sure what the recipe says. Sounds good though!
@@tlholland64 They are called a few different things, smash taco is just one of them. I think it mainly gets the "smash" name because you want to thin out the meat, like a smash burger. But often the videos for these "taco burgers" shows people cooking the meat and taco together, like Barry is showing. And honestly nothing great about them, I found them to just be a greasy mess when I made them. Not to mention the bun helps balance out all the meat flavor, the taco shell does nothing.
I made these, smashed the meat onto the tortilla and then pressed the tortilla as it cooked. It helped bind the two together, not sure it would have been as effective if I cooked them separately. The shell was warmed on the side with the meat, and crispy on the outside. I used a leaner mix of beef, no extra oil added or anything, so not super greasy at all. Really delicious and different from our normal burgers on burger night.

Yeah, although I wasn't sure at first with the Dad dancing etc of TikTok, there are some very odd / but also some very delicious stuff on there, nice to try them from time to time!
I love that you're still doing these traditional-style videos where you're also the cameraman. The professional ones are cool, but it's nice to see that you're still open to doing things the way you did for so many years. Keep up the great content!
The key thing if you want to make good Smash burgers is you don't want to pack them tightly when you are making the patty like you would a normal burger, you want a somewhat loose patty. (You don't have to worry about it falling apart because you will compact it a bit when you "smash" them down). That way when you smash it down it's surface is bit more rough and gives it more surface area to caramelize and brown giving it a very unique texture and consistency compared to regular hamburgers. It's what makes smash burgers so dang awesome.
I love how ypu've mostly gone back to the original format. No quick cuts, no shaky cam panorama. Back to what we love :-) Thank you, the kitchen looks amazing!
The dump cake made me think of something our local Woolworths demonstrated once. They made bread and butter pudding using stale hot x buns. That was very good.
Love the vid! One thing with the potatoes, if you toss them into a pot of boiling water with a tablespoon or so of vinegar for a couple minutes before you start skewering and stretching, it'll make them more flexible and less likely to break!
Another great video. I had to restrain myself from yelling at the TV for you not to skewer your hand as you were working with the potatoes…the only one of these I’d try (had been considering making some gaufrette/waffle fries…this looks pretty tasty too. Have a fantastic week!
Barry you are amazing, that being said a smash burger is what the name implies. You literally take the meat , throw it in a pan and get a burger press or a good spatula and smash it down as thin as you can get it . The potatoes have to be cross hatched when you cut them , when it pulls apart it will look like a waffle fry and instead of baking it , get a shallow pan and fry them . Or a deep fryer and dunk them . And as far as that dump cake goes , that's just diabeetuss . .
I've done those Big Mac Tacos before but the trick is to make the beef even thinner so that they don't need to be in the pan as long and then use american sliced cheese instead so it melts quicker and you don't need to use the lid which makes it go soggy. This way you get a just cooked beef patty which is still really juicy, ooey gooey cheese and a crispy taco shell which is still slightly chewy in the middle.
I love how excited you get with your cutting skills regarding the potatoes. I wonder if they'd hold up if deep fried Or easier if a metal skewer was used? I'm sure someone will let us know.
The Big Mac taco has so many possibilities! Switch up the seasoning: Greek seasoning, some feta, & tzatziki… I live alone, so I was thinking about setting them up ahead of time and freezing them with some parchment paper between them, then cooking from frozen as needed for a super-fast dinner. If they’re thin enough, you could cook from frozen in just a couple of minutes.
😋Dump cakes should be served with ice cream - that looks amazing! That would be an awesome way for a bakery to use leftover goods if they have them. Jelly donut dump cake 🤤
@@mrbarrylewisI live in the midwest in the US, and grew up eating dump cakes! I've never seen the donut layer before. I always had ones that contained the boxed cake mix (I like yellow cake mix the best!), butter, and canned pie filling. They are so good and so easy to make!
Totally a thing. They come in a lot of varieties, the ones most common when I was growing up had pie filling and canned pineapple and maybe a coconut and nut topping. Super common at church potlucks.@@mrbarrylewis
Every single recipe looked delicious!! Oh, Barry, if you liked that cake, do try an Ooey Gooey cake (made with a cake mix and cream cheese). It's to die for.
Pretty sure I read a chemistry textbook once that said if you combine cake mix and donuts you'll synthesize vitamins A, B, C, D and E as a by-product. A secondary side-effect is that all the calories evaporate in the oven. Dig in, people!
A smash burger should start as a 1.0 to 1.5 oz ball of mince. It goes down on a screaming hot griddle at approximately 450 F (233 C) Then you smash it down with either a press or a sturdy flipper to really thin.
Try the accordion potatoes with a metal skewer! Metal is smoother and would be way easier to fan out and twist the potato on. Wood is porous and grips onto things. Though this is two months old, so for all I know, you’ve already done this
Just watched a video on slicing cucumbers and few other veggies into spiral towers and aesthetic looking things- that would be cool to try. Makes you want to throw a fancy party cause the veggies looked so good Always enjoy your attempts!
Try the taco burgers again, except next time smash it down into the pan with a spatula. That will thin the burger even more and make it have full pan contact for better browning, while making it fully stick to the tortilla. Edit: You can also try sprinkling a thin layer of onion under the burger. The onion will push into the burger and partially caramelize.
The big mac one reminded me of something I saw the other day - a sausage roll wrap. Get a wrap, get some sausage meat, some herbs (or whatever else you want in the roll), spread the meat mixture across the wrap, roll it, cut it into bite size chucks then cook it (I think for between 16-20mins depending on how much you had). Would be interesting to see how it turns out if you get a chance to do it!
I'd add some cinnamon and sugar to the butter at the top of the donut-dump cake. Make it even more unhealthy, but hey, it already has donuts and sweetened condensed milk, what's a little cinnamon sugar lol
One little thing... You messed up the smash burger big mac taco... You are supposed to smash the burger in the pan while its cooking so you get a nice crust and crispy edges... Then you put the tortilla and flip it over... So then you arent worrying about the tortilla burning...
When I make "fast n easy pie" I put down fruits or berries in the pan. Then I mix flour, sugar, vanillasugar, bakingpowder together n dump it like that cakemix on top and then cover it with thin slices of butter. 😊
Then key to a smash burger is to start with a small ball and then with all your strength, press it flat with a metal spatula. it should be so thin that you could never pick it up raw without it falling apart. the entire burger should take like 30 -45 seconds to cook because of how thin it is
Next time maybe skewer the potato before you cut it? It should have more structural integrity that way, and the skewer would act as a stop as well. Then the potato is already on the stick, so turning it should be easy.
Smash burgers are literally smashed super thin. About 3oz of beef into a "ball". No oil...it ruins the tortilla! Smash it into the pan with the tortilla. Should take only a moment on the beef side. Sear and flip, add cheese, a tablespoon of water (to create steam), and lid it up. It comes out perfect and is foldable.
hi Barry just to saust to say how mhow much me an my mum love watching tour vids every onday and thursdat it is our thin to do while we eat our tea and we love what u do i think it would be awsome if u and jamie oliver did a sef u and jamie oliver did a series on channel four that would be really fun to watch keep upnthe good work and give bosten a hug from us
rather than use a tortilla, use a fatter pita bread. Look up turkish lamajouen. Basically the same thing, but the pita holds together better, can take some extra heat, and gives you more to grip on to.
The idea of a smash burger is to start off with a ball in the pan and then when it's hot enough, smash it down hard with a spatula into something almost flat. The burger is supposed to end up super crispy because of how thin it is. If you don't start off with a ball and smash it down into the pan then it doesn't get crispy enough and it's not *really* a smash burger With this tik tok recipe, I've seen it done where the burger goes in as a ball, and then gets flattened with a spatula but there's a tortilla between the spatula and the meat ball to make sure the burger gets smashed into the tortilla
the Tortilla: Less meat, put it in the pan with out the tortial, smash it, when it's brown, turn the meat let it geht brown, slice of cheese an taco on it, turn it, "toast the tortial and melt the chees, take it out and put the rest on.... maybe it works better, like this?
I totally prefer the old school Barry videos !! Making mistakes stuff on the lense just makes it feel more like it’s just you and us watchers ! If it’s not broken don’t fix it springs to mind , love your content whatever path you choose
Tried making the donut dump cake. But mine didn't "set" at all. It wasn't gooey, just a separated puddle/soup of the milks. Any ideas what I did wrong!? 40mins at 160 fan. Nice brown crunchy top, just the rest wasn't good.
