Every August we pick wild mustang grapes and ferment the juice and make jelly. This year in the Texas Hill Country it has been dry, so we weren't able to find a productive vine until while checking on our cattle we caught a glimpse of a vine sparsely populated with grapes.
We were able to pick 4 gallons of grapes and we are so thankful! Take a look around your area and perhaps you have a wild edible that you can forage for.
We fermented the grape juice for 7 days then strained, poured into jars, and stored in the refrigerator. We love adding this fermented nutrient-dense food to our diet. Fermented wild mustang grape juice is delicious and free!

I had a volunteer vine take over a window on a sunny side of the house a couple of years ago so I let it flourish. It repaid me this week with tiny grape clusters all over it. I'm a homebrewer so you can see where this is now going! Thanks for starting me on the proper trajectory toward a fun new beverage.

These thngs are growing everywhere around me! I go for walks in the park, and I see them. Riding on a train? Yeah, I see them. Lol. Oh, and mulberry trees grow wild here! They are native to Texas also! Veen eatin' good! 😁

We live in Kempner Tx on a small homestead we call "Greenacres Homestead". We have a long driveway that leads upto our gate to our home. All along the left side of the driveway we have mustang grape 🍇 vines hanging on the trees and fence line. Then we have them in our back yard along our fence. Then if we want more there everywhere around this part of the country. The thing is so many people dont known about them and have so much city in them that picking anything from outside is beyond them for it has to come from a store. Lol We love making jelly from mustang grapes, Mulberrys, mesquite tree beans, Prickly pear cactus tunas, beauty berries, pears and anything else we get our hands on each year around this part of Texas.

How fortunate you are to have mustang grapes in your area. Last week we travelled to Palestine and I saw lots of vine. Hopefully since we have had rain we will have wild grapes this year. However, we have lots of prickly pear cactus tunas. Wild foraging is an important skill. Thank you for watching!

Hi Caren, Thank you so much for the video. What is the name for the tubes that are put at the end of the process. Also, how long do you keep them? Does it need to be refrigerated? How do you drink it, how much? I am sorry for so many questions I just found some texas mustang grapes in my backyard and want to know all I can. God bless you!

Thank you for watching Clara! The tubes are called airlocks or fermentation bubblers. I use them to allow air to escape so the pressure won't built up in the jar. This causes a big mess in your refrigerator. I am drinking last summer's grape juice right now. Yes, after I put the juice in canning jars with an airlock we put it in the refrigerator. We usually drink the juice with sparkling water, about half and half. Probably one cup of grape juice to one cup of water. I am more than happy to answer any questions you might have. How fortunate you are to have mustang grapes! In this part of Texas we pick mustang grapes in August.

@@texasfarmsteadliving-caren9517 Hi Caren! I have fermented a few veggies and they last for months and months in the fridge. Did you say you were drinking last year’s juice? So it lasted a year in the fridge? We have a good amount of wild mustang grapes on our property and love the idea of making juice for all the kids! Can you later use the fermented juice to make jelly?

@@zibratesmom-giftsforlife8751 Yes you can Wendy. I am thinking of making a video using frozen grapes from last year to ferment then make into jelly. I think fermentation enhances flavor.

My grandparents and parents here in Texas made a slightly fermented grape juice regularly. Or maybe it was just tart juice but I'm pretty sure it had a tad alcohol. Now here I am "retired" to the country and I am we have grapes and I am wanting to try what you did and let just a little fermenting happen. But I've heard it is easy to end up with a bad natural yeast or with it turning to vinegar. Are there any precautions you can advise? Also, what purpose do the leaves provide? Your method seems nice and simple.

I just found them in my backyard grow on al old tree. They are small and green now.... our oldest popped one in her mouth b4 I could say they weren't ready 🤣🤦‍♀️. Anyway I wanted to know if they get sweet by August

A few questions, processing for the 1st time and my juice will be ready tomorrow, (7 days). So the venting lids that release CO2 while keeping air out are a must even in the refridgerator? Exactly when does the fermenation cease when stored in a fridge? Curious if one would want to stop the fermenting phase at all. Any comments would be helpful Caren. Thank You,. Hello neighbor, thank you for watching! The venting lids are a great idea and will help prevent a mess in your refrigerator. I have used wine bottles and corks in the past and had some corks blow off even in the refrigerator. Fermentation slows down at around 50 degrees. I usually ferment, bottle and leave in the refrigerator until sometimes the next year. I have some fermented grape juice from last August that I have been adding to kombucha. I have never had a problem with mold. The grape juice does continue to ferment a little bit but I wouldn't say it had the alcohol content that modern wine has. You certainly could continue in the process and make wine. We want a grape juice that has enough alcohol content to keep away mold but can also be used to make jelly. Delicious! Hope this helps!

@@texasfarmsteadliving-caren9517 I just tried to process mine, I waited a day too late, so when you say 7 days, you mean say sunday through saturday? Also is it OK to do this in a 5 gallon plastic bucket. Sorry for the questions, but my results are too thick to drain properly, Not sure If the extra day mattered I started on 7/5 and tried to drain today 7/11. It's really thick with skins and stalks.

The length of time I ferment is based on when I like the taste and the mixture stops bubbling when I mash it. This varies due to ambient temperature. Did you mash your grapes twice daily? The mixture should bubble and the grapes skins should rise to the top and the grape juice should be thin below. Is your bucket food safe? I haven't ever used plastic so I am really not sure.

1. rinse grapes in cool water 2. drain and place in a crock. make sure you leave some grape leaves in the grapes. 3. Add sugar to start fermentation ( you might can ferment without sugar) 4. mash grapes 5. cover with tea towel 6. mash every 24 hours until stops bubbling or you like the taste. 7. Bottle.

My crock holds 4 gallons of grapes which I fill up to the top before I add sugar and mash them. We add about 4 cups of sugar to start with, you can always add more later. We do not eat much sugar so I use as little as possible. Also, these are wild grapes and aren't sweet at all. Thanks.

Thank you for sharing. Could you add a yeast or a probiotic capsule to get the fermentation started? I'm thinking washing the grapes will take off the wild yeasts.

The wild yeast from the grapes has always been enough to begin fermentation. I rinse the grapes in cold water and have always been successful. It is important to add a few grape leaves as well to your ferment. Thank you for watching!

Hello and thank you for watching! The fermented grape juice seems to have enough alcohol to prevent mold if kept in the refrigerator. I would not say it is wine but you could continue the process and make wine. We enjoy grape jelly made with fermented grapes also!

What was the white powder added to grapes? Sugar? Is sugar needed to get the grapes fermented? Would it ferment without it?

It was sugar. We add some sugar because these wild grapes have none or very little natural sugar. It taste better with sugar, however most of it is consumed by the microbes. Thank you for watching!

It started to turn into vinegar, but not there is a layer of Kahm yeast on top, and smelling very yeasty. Should I keep removing it?? Or does this turn into a sheet of mother? Has this happen to you?@@texasfarmsteadliving-caren9517

It is important to stir and mash the grapes twice daily. This will help avoid yeast growth on the top. I don't believe this has happened to me.@@aikoshimada3167
