Eric, I love how you respond to all the animals you guys see on your adventures from cats to birds to ... ugh....massive beetles! Taking cooking classes around the world would be a dream come true for me but second best is watching you two get to live that adventure. My favorite cooking class ever was at a small farm in Tuscany....when we returned home it was pasta for days! Keep traveling! I’m having a blast with you without needing to hustle through airports!

Those “bamboo/stalk things” is Sugar cane. That’s where your white and or brown sugar comes from. Those ones are a bit dried because they have been stripped and left exposed to the air but a fresh one can just be stripped and you can just bite right in. It’s super juicy and super sweet.....like sugar🙂.
Did you come across "noname"? It seemed to be a staple of the backpacker diet when I was there, because it was usually the cheapest thing on the menu. Either chicken or vegetable. Looks like little fried potato cakes that you eat with sweet chili sauce. I asked why it was called "no name" once and they shrugged and said it doesn't have a name so it's called no name. I couldn't tell if they were taking the mickey out of me or if that's true. Anyway, they were yummy washed down with a coconut smoothie.
That bird is a species of raven, wicked smart. They form symbiosis relationship with water buffaloes. The birds get to eat some bugs, the buffaloes are free from the bites...
Sooo birds climb up. soooo if you bend your elbow and keep you hand higher than your elbow it will stay on your hand and not go up your arm. I used to have macaws. fyi for any future bird encounters.
The part with the little bird is funny. And it might be funnier if you know the Thai phrase "นกเอี้ยงเลี้ยงควายเฒ่า". I don't know how to correctly translate it but it's about how this kind of bird loves to stay on the WATER BUFFALOS. ....And unfortunately water buffalo to Thai people is somewhat like donkey to westerners. It's what stupid person are often refered to. So Alison, you can feel better now that the bird didn't show much interest in you. :)
I am Thai. I don't like when there are vegetable in Thai hot basil dish and none of my Thai friends like it. It is not an original recipe and it is not delicious like it should be. They try to lower the cost because meat is more expensive. No real good Thai restaurant cooks like that; but for street food, of cause, they might do. I didn't recall seeing any other vegetable mixed in this dish in about twenty years ago.
