Hey it’s my bday 🥳 and I’d like to give a gift! This (accidentally vegan) cake that was popularized during the Great Depression. My mom tells me she knows it as “war cake”. Basically, made with no animal products. This is an incredible food that will appease your cravings! Hope you enjoy making this as much as eating it!
What you’ll need:
Cake:
• 2 cups sugar
• 3 cups flour
• 5 heaping Tablespoons of cocoa
• 2 teaspoons baking soda
• 1 teaspoon salt
• 10 Tablespoons oil (I used olive oil)
• 2 teaspoons vanilla
• 2 Tablespoons white vinegar
• 2 cups cold water
Frosting:
• 1 can full day coconut milk (cream part only)
• 1/4 cup icing sugar
• 1 cup chocolate of choice
What you’ll do:
1. Pre measure all ingredients.
2. Preheat oven to 350 degrees.
3. Combine dry ingredients and wet ingredients, then mix together and pour into an UNGREASED 9x13 pan.
4. Bake for 40 minutes.
Frosting:
1. Put coconut cream only into a bowl (leave liquid out).
2. Mix in icing sugar.
3. Melt chocolate however you want (I did double boiler).
4. Mix chocolate to the bowl and whip with a blender to add air (careful, chocolate may fly at ya!).
5. Place in fridge for an hour.
Once the cake is well cooled (an hour) you can then add frosting and whatever else you’d like. Since mine was dark chocolate, raspberries cut the richness quite well.
