It sounds as though the voice-box (or whatever it is) doesn't play one note, but plays a whole chord.

This is, in fact, true. Mammals make sound with the larynx in our throats, but birds make sound with the syrinx in their chest. The syrinx sits at the junction of the two lungs, with independent airflow through each half, so they can literally sing two notes at once.
