On the Gillespie Borate gelling up, I wonder if a polymer reaction might be happening (like what happens with cement). If so (like cement) rather then adding water, try copping it up (possibly with an electric paint stirrer). If it is polymerization, that could restore the consistency. I did some searching and found several academic paper that indicate that Boron can catalyze polymerization.

Re Gillespie's- I found the exact opposite to be true. Gherstley's always gelled up. And now, switching to Gillespie's, I find that I have to flocculant it, else it starts to separate almost immediately.
