This one looks so realistic, it is composed with a thin layer of praline and a freeze dried crunch, a generous fresh raspberry and yuzu compote, a moist flourless chocolate sponge, a soft raspberry cremeux and a light chocolate mousse.

Unfortubately, the chocolate used in these sculptures taste horrible. They use a different type of chocolate so the sculptures won't melt at room temperatures.
