You don't have to - but if you do, you can keep it longer than leave it room temperature. Sometimes it gets mold very quickly.

Your enthusiasm in your videos is contagious. Watching you get stuck into eating the food you have cooked is the way I think all cooks should do, it has made me want to try your recipes, getting my shopping list together thanks to this video and I will be trying your Chicken Chow Mein and Okonomiyaki first. Keep up the great videos.

Can you give a recommendation for a replacement for Shiao xing wine or rice wine, I don't use alcohol at all as I am Muslim but I love cooking Asian food, I usually just leave it out but wondering if there is an alternative. Love your channel! Thank you for everything ❤️
@robertcorbell1006

Rice and/or palm vinegar works very well if you don't want to use alcohol since many Buddhists also don't use it for religious reasons, too. Ginger paste blended with fish oil can also be used for a substitute for oyster sauce if you happen to be Shia' rather than Sunni and are unable to use non fins/scales fish for cooking. My sister is vegetarian and my family just so happens to live in an area (Springfield, MO) with quite a few Asians of many different faiths where food has to be adjusted accordingly at various shops and restaurants. :)

@laeknier--most people refrigerate, but its not required. Many Korean restaurants leave gochujang and sriracha out on the tables. You're fine
