They boil the noodles and immediately put them and wash in cold water so that the noodles keep the solid texture while it is cooked.

it seems she puts sugar in. white broth is called Kong guk mul which is made out of white beans. you boil the white beans and grind them afterwards. Find Kong guksoo recipe on RU-vid ^^
