Today I am showing you how to make my Grandma’s Southern Coconut Cake. I made it as a sheet pan cake today to make easy to take to a barbecue or a party. This cake is always a favorite among kids and adults. You can even make the cake as cupcakes.

I hope this helps. 3 cups All-Purpose Flour (if you can, I would say white Lilly AP) 2 cups sugar 1 teaspoons baking powder 1/2 teaspoons salt 1 teaspoon baking soda 3 large room temperature eggs 2 tsp’s of coconut extract 1 cup of buttermilk 1 stick of soften butter 1/2 cup of vegetable oil Stir flour, baking powder, baking soda and salt in medium bowl until blended.

~What a wonderful recipe. I'm a fairly experienced home cook/baker and I haven't seen butter AND oil used in a cake recipe. Self-rising flour is not a common thing here in Canada, but I know how to make my own. My husband _Loves_ coconut and I'm looking forward to making this. And your frosting recipe is so unique as well. Stabilized whipping cream - wonderful! Yes, I do this for whipped crem, but have never done it with frosting. (I do NOT use Cool Whip) - - I have watched many 'Southern Cooking' YT channels, but am very disappointed SO many processed ingredients are used. (Cake mix from a box, canned soup, pkgs. of ranch dip, biscuits from a can, canned vegetables) I'm fine making those casseroles *once in a while* , but I'm looking for real, old fashioned recipes from scratch As I said, those recipes using pre-shredded cheese, a block of cream cheese, a can of soup,... well, that's not really cooking to me. One recipe I saw was a can of green beans, brown sugar and bacon - I think it was the canned beans that turned me off. Anyway, I'm going to subscribe and I know you'll use some packaged things (and so do I! just rarely) Hoping to find old southern recipes 😊 .. maybe more from Grandma and Great Grandma! ❣ The only problem I might run into is not being able to get some things here in Canada. PS - I think all southern casseroles are topped with crushed Ritz crackers 😊A new thing for me, but it sounds good

@@SouthernWomanLifestyle Thanks very much for taking the time to write this out. However, the 'recipe' I have for self rising flour is 1 c. flour + 1 1/2 tsp baking powder. So that is a lot (4 1/2 tsp of b. powder for one cake!) Robin Hood is the biggest name brand of flour here, hopefully it's as good as your Lily brand.

@Luna.3.3.3 @Luna.3.3.3 well I think that might be a little too much. Of course baking powder is two parts cream of tartar and 1 part baking soda, but I would be hesitant to use that much. The reason being is if you were going to use the buttermilk which my grandma’s recipe calls for you’re gonna have a lot of rise and that much baking soda interacting with the buttermilk I fear your cake may overflow the pan. I would experiment just making the cake without the coconut extract and use vanilla extract instead that way you’re not gonna waste expensive coconut extract. I would also put the baking pan on a half sheet pan to catch any possible overflow when baking. If it works you can always put a simple chocolate frosting on it and everyone will still be happy. That’s the thing you know different flour brands can give you different results. It’s the reason why I do like using white lily whether it be all purpose or self rising is because it’s a soft winter wheat and it’s milled more like a cake flour, it’s why it gives the tender biscuits and cakes. Please let me know how it works out. I hope I gave you good advice . 🙂

@@SouthernWomanLifestyle Definitely I won't use that much b. powder. I'll go ahead and make it according to the revised recipe you gave with the coconut extract, I'm sure it'll be fine. In regard to the flour, it sounds like your Lily brand is what we'd classify as 'cake & pastry flour'. I'm going to make it this week and I'll let you know how it turns out. (I had to order the coconut extract, for some reason, it's not that common in the grocery stores here)
