I am by no means a pitmaster, although I am one hell of a cook on the grills I own. Watching these videos makes me realize that I should be hanging around pitmasters. They are MY kind of people.
Ahhh man. It would literally be my dream to go here! The amount I could learn for my BBQ business here in the UK would be incredible. Watched chuds video on it last year and I am obsessed!
Windy City Smokeout is definitely a bucket list event for me. Unfortunate that Truth, L&L and Feges weren’t able to attend this year, but it looks like the quality of the event didn’t suffer one bit! That pork belly looks legendary 🙌

My boy Thyron is big stressing!! He can't use his famous mop sauce since the rotisserie can't move. I wonder if his rig can still manually turn those so he can eventually pull all of them out. 200 Racks I would be flipping out! Plan D is right haha
