This may be the fastest, the easiest, and the best roast chicken you've ever made, and it's all done in a cast iron dutch oven. All we do is place the dutch oven into your oven, heat the oven up to 500 degrees, and get the pot screaming hot. While the oven is heating up, cover your chicken with a dry rub, and that's it. Now our blazing hot pan comes out of the oven, and we simply drop in the chicken. And it goes into the oven to bake at 500 degrees for 40 minutes. After 5 minutes, remove the lid to crisp the skin. And here is the result. After letting the chicken rest for 10 minutes, you have a chicken that's thoroughly cooked, bursting with juices, and possibly the best roast chicken you've ever made.
