During my time in culinary school, I learned that even offsetting a single ingredient makes it your own. I believe this applies to, not just yours, but anyone who passes recipes along. If it's a recipe that is non-traditional because you made it more delicious - then haters are gonna hate. I am using this recipe tonight and the smells wafting through my house are amazing. Store bought, pre- cooked tortillas and you think it's better than homemade or even buying raw tortillas that cook in 2 minutes. No. This is by no means better by any stretch of the imagination than traditional. It may be alright. It may be good. He called these the best. Laughable. And if you think they are then you obviously haven't had enchiladas before. This isn't a recipe he passes down with pride in a little book. It's just for RU-vid.
I am a casual home cook and I like this channel because I can actually make the recipes. I find most RU-vid cooking channels to be pretty pointless in terms of feasibility. I don’t have hours to make homemade rotisserie chicken on a weeknight. These recipes are realistic and don’t compromise on taste, just what I need. Thank you Sam!

Made this tonight and it was AMAZING! Only thing I changed was I put cheese in the enchiladas also. Also wanted to suggest telling the oven temp I couldn’t find it anywhere I did 400 degrees and it was perfect in 30 mins! Kudos man this was the first video I watched! I will watch more!

I swear I love everything about this guy... I've seen ppl call him rude, ahole you name it but literally everything I love.. I feel like no matter what he does he could never get on my nerves.. I watch this channel and it brightens my day and I'm laughing the whole time... Sam can you please adopt me! I mean I'm 27 but I will clean you're whole house just to be able to eat your food everyday! lol its like you reached into my sole and made all this food lol I don't even know what I'm saying... especially because all my health problems I'm only allowed to eat fruits and veggies... but when I am allowed to eat again it'll be your recipes!!!

I've heard that the problem with pre-grated cheese is the additives make it less melty, but that definitely isn't an issue in this case as can be seen from the end result.
Just made this for me and my girlfriend. This was FANTASTIC. Only changes I made was I used corn tortillas and I also put some monterey Jack inside the enchiladas. To soften the corn tortillas I had to microwave them for about 20 seconds. Keep on doing God’s work, Sam. Cheers.

We've tried a few different "Chicken Enchilada" recipes and this one is BY FAR our family's favorite!!! Our grandkids LOVE these!! They are a frequent "request" dinner. My recently passed sister-in-law asked me to make these for her to enjoy-even after some brutal chemo!!! She said these were THEE BEST chicken enchiladas she'd EVER had. So thank you, Sam!
We had some friends over that were moving out of town last weekend. I made two pans and there was nothing left afterward. The sauce that is made in the pan from the cream and cheese, combined with the chorizo sauce was unreal. I really think dipping the tortillas in chicken stock added another favor profile that I’ve never had before, which was awesome. I hope you made it, what did you think?

I tried this recipe tonight and it was fantastic. I added xheese to the chicken mixture, and topped it with black olives making it pretty My hubby was so pleased. What else do you have for me to try
These are the best chicken enchiladas I have ever made or tasted. I like creamy chicken enchiladas and I have tried using sour cream, béchamel sauces, cheese sauces and cream soup sauces. Nothing compares to just using straight whipping cream. The green salsa, green chilis and chipotle matched up with the chicken filling perfectly. I home run for my palate.

I made these today and I must say they are the very best Chicken Enchiladas I've ever had. The smokiness of the chipotle, the richness of the chorizo sauce. OMG. I ate waaaaaay too many but I'm in heaven! This is the easiest and best it can get. Also I shredded the chicken at room temp it seemed to be just as easy.
Sam, I did it, I made these for my sons birthday, "sorry I didn't get back on here sooner to let you know how it went" they were an absolute knock out of the park hit. I have since made these 7 or 8 times for other folks getting wind of my cooking prowess "Thanks to you" Sam.. this is now a family favorite, easy, quick and inexpensive to make.
At first I watched it like why did you add cream. Ugh. Then I made it, and by far the tastiest enchilada. It's highly requested now every night for dinner and party's.
He has another video of the same enchiladas but not with the new chorizo topping. He bakes them at 350. The chicken is already cooked since he uses the pre roasted store bought! Genius!!❤ So hes mainly melting and bubbling the cheese sauce. 350 for 25 to 30 minutes... until bubbly and melty and slightly golden. My mouth is watering. I'm gonna make this tomorrow for Easter!🎉😊❤
I can’t get enough of this recipe. If you’re thinking of trying it, stop thinking and do it. It is seriously one of the best dishes I’ve ever eaten. It slaps. Definitely a favorite recipe. I add to the filling a little more the make them fatter. I also add cheese to the filling. I use the large tortillas add fold the ends over more like a burrito.
I made these last night and, of course because SQUIRREL I put all the cheese inside. No trouble, just added another round to the top. Wow are they good.

I literally make these twice a month but I zhuzh them up a bit by putting some of the cheese in the enchilada mix with some diced jalapeños or serrano peppers...fantastic recipe!
Been making this for a few years now and absolutely love. Just tried using leftover smoked chicken and rib meat. You have to try it, it was ABSOLUTELY DELICIOUS!!. To let the chorizo sauce last further I add more whipping cream and then add Parmesan cheese to thicken the sauce up. Got to try this one!!!!!!

I made this too and I have to admit these are the easiest and best tasting chicken enchiladas ever! That being said, for the love of God read the ingredient list on the Chorizo. I used the vegetarian chorizo because both the pork AND beef versions ingredient list got to me. Ingredients: (Pork or Beef) salivary glands, lymph nodes & fat (cheeks), paprika, soy flour, vinegar, salt, spices red pepper, garlic, sodium nitrate.
I have to say this is D@mn GOOD! This like the 5th time making it. Its fast and easy. Made it with smashed garlic and herb potatoes and had 2 helpings. Luckily this isnt finger food or I would be missing some fingers. I roast a whole bunch of chicken and shred it up and put it in 1 lbs packages and freeze them for fast dinners. This recipe and the Kung Pao chicken are my family favorites. I need to try some more of you recipes. Thanks!

I'm skeptical of the plain cream, when you could just use the chorizo cream on the bottom of the pan instead. Also think it's a fail if you don't put cheese inside the enchilada, but... to each their own! They still look really tasty.
I baked mine at 425 for about 35 minutes. It was boiling and the cheese had started to brown a bit (but everyone’s oven is different). They were perfect for what I wanted.
90% of everything I know about cooking I learned from Sam. While, this is one of his best recipes EVER. (Easy, fast, economical, and delicious!). NO BUENO ON THE CHORIZO.
