When I married I did not pick out fine chine or silver plated flatware. I've picked Oneida stainless flatware & I still love it. My pattern has long been discontinued but I found used sets on ebay. It's cleaned in the dishwasher & survived 44 years of real living.

There are multiple important parts that all have to be there. They have to be dishwasher safe, strong, balanced, have a good feel in the hand and the style has to be something you are happy to look at for 25+ years. I can't believe some of this horrible stuff gets manufactured and sold, TBH.

Another minor issue that I learned the hard way, and it doesn't sound like they considered in their testing, is that knives are also used for spreading condiments. The flatware that I otherwise love has very stylized, triangular knife-blades ( wide at the base and narrow at the tip ), which makes it very difficult to use them to put butter on my toast or mustard on my sandwiches. Just something else to think about before you commit to buying a set, that didn't cross my mind until I actually experienced it first hand.

I have an 90+ year old silverplate set that I adore. (Yes, I handwash but it takes maybe an extra minute a day? And I *maybe* polish once a year. They are surprisingly durable & get used for EVERYTHING everyday.) Very comfortable in the hand & very pretty. PLUS(!!!) they were designed with a bunch of specialty things. You haven't lived until you've set a table with luncheon forks & knives, stirred tea with a 5 o'clock spoon, or eaten pie with a pastry fork. There are ~10 different spoons per place setting (which, yes, is quite a silly number) & at least half a dozen each of forks & knives. Basic setting pieces are common online & if bought in lots from people clearing out their attics old silverplate is comparable in price to most stainless.
@Max-hq2jm
@Max-hq2jm Месяц назад
I agree! The old silver plate sets knock it out of the park for me for the same reasons...I have a set from 1910 that I bought at an estate sale for $70, service for 12, with luncheon forks, cream soup and regular soup spoons, etc. They are very well balanced, smooth edges, and look glorious... polishing? I only have to do quarterly at most. They go in the dishwasher (mustn't let them rub against stainless), and set a beautiful table. I have only ever eaten with silver plate (Mom's influence), and there are folks who believe eating with silver is healthier...I don't know, but I love the history and practicality of this set. And sooo much less expensive in $$ and conservation of resources.

A micro-serrated knife can spread butter too, though. If one can do both, and the other can only do one, then the more versatile has an obvious advantage. They're looking at sets. One set has more useful tools that do more jobs. The other may require you to buy other utensils. It's less complete.
@seikibrian8641
@seikibrian8641 Месяц назад
A dinner knife or "place knife" is not a butter knife, it's an all-purpose knife, so being able to cut meat is important. As Adam says, though, if you eat a lot of steak, having dedicated steak knives is also good. An actual butter knife is a smaller knife that goes on the butter dish, or on the bread & butter plate if you have enough of them for each place setting. To be really precise, there is also a difference between a butter knife and a butter spreader, but few sets offer both, so they're most-often used interchangeably. (High-end settings may also offer a dedicated fish knife and fish fork, and even an oyster fork. In times past, there were also ice cream spoons/forks, which were essentially fancy sporks. We mostly use fewer items for more foods nowadays.)
@EvanScangas
@EvanScangas Месяц назад
@philobrain flip that around, an actual steak knife can also spread butter, but you also don't need to apply undue force to cut through a meat. Many sets have matching steak knives, I'd just make sure the knife was available before investing in 8-12 settings. I'd also see what other items were available for the set. It's like purchasing pans, it's an investment that can last a really long time, so showing 2 knives both working poorly wasn't a big selling point for me.

I really wish someone would find an electroplating technique that would actually survive years of dishwasher use, so you could get brass colored or black colored utensils, but it looks like only silver works
@Paelorian
@Paelorian Месяц назад
The problem isn't the technique, it's that the outer plating is so thin that the metal just wears off, especially with a soft metal like gold. Steel and silver flatware aren't plated, they're solid metal. You could use glass or copper utensils. Or titanium or aluminum, which can be anodized for a durable coating of different colors, or other metals. Or plastic, but I wouldn't choose plastic. Other than decoration, aesthetics, and form, the choice of material should be determined by practical concerns like weight, ease of cleaning/hygiene, durability, taste (many materials affect the taste of food), and the antimicrobial self-cleaning ability of some metals (by the ogliodynamic effect), most famously silver. I've always wanted a gold-plated spoon and fork for my own use. Expense aside, gold is an ideal material: unlike silver or steel, it's completely tasteless. Unlike steel, it's also mildly antimicrobial. But gold is soft and will wear, so I'd have to gently hand-wash every time and even anything covered in gold leaf or electroplating that I'm regularly washing with a sponge is going to remove the gold eventually.

The video was recorded in 2022 for the 23rd Season of ATK TV on PBS. Likely by the time the episode this segment was from aired on PBS in most markets in the US, their original winner was already likely unavailable/discontinued as Our Table was a Bed, Bath and Beyond brand. BB&B filed for bankruptcy in April 2023 and the last of its stores in the US closed in July 2023. Frustrations of working far in advance of publication/broadcasting. The Caesna Mirror set and the LIberty Tabletop set linked in the video description as well as the mysteriously not linked best buy from Oneida were all rated as "highly recommended" by ATK.

I’d like to hear some opinions on colored flatware such as black or gold. I’ve redecorated my kitchen with black and white buffalo plaid and have thought about getting a set of black flatware but I’m afraid it won’t hold up well and in less than a year it will be peeling or flaking off. If anybody has any experience using this I’d like to know your opinion.

For longevity, make sure all steel is 18/10 stainless. It'll be stamped with "18/10" on each piece. This is the highest quality stainless steel for consumer/commercial (non-industrial) use. LOOK CAREFULLY, I've seen flatware that says 18/0 on it. That's 18-ZERO rather than 18-TEN.

The Oneida set was rated the Best Buy because it performed on par with the winning set (now discontinued) and two other sets rated as "highly recommended" by ATK. Pricewise, Oneida was the middle of the pack of the original nine sets tested. So there were cheaper sets, but most were "not recommended" or "recommended with reservations". There was a set by Henckels that was "recommended", but overall the individual pieces were a bit "dainty" - better suited for children and the spoons didn't hold much. However testers were impressed with the sharpness of the knife. The Henkels set was about a dollar less per utensil than the Oneida at the time of testing (circa late 2021), second cheapest of the bunch.

RU-vid is not the be-all, end-all of video debuts. This video is part of an episode from one of ATK's TV shows - this particular episode began airing on PBS almost a year ago. It's based on an equipment review originally conducted over two years ago with a summary published in the Sep/Oct 2022 issue of Cook’s Illustrated magazine. This segment was likely recorded around that time. Prices typically reflect what ATK paid at the time of testing. They have no more control over pricing than they do over the discontinuation of products they test which is what happened to their winning flatware set by Our Table (and a sibling set) when Bed, Bath & Beyond went bankrupt last year right around the time this segment's episode began airing on PBS. There's a link in the video description to the full review, updated last year to acknowledge the changes in status and ATK's new favourite. Frustrations of those who work and plan far in advance of publication/broadcast.

Just a personal observation... I noticed when Julia was cutting the pieces of meat that she used a "sawing" motion to cut them. Many years ago, in fact decades ago, my Grandfather taught me when cutting steaks, or any meat, to draw the knife across the meat and then raise the knife up from the surface of the meat and return the knife to the beginning of the cut and repeat the "drawing" motion. He also told me that if it takes more than three draws (cuts) across the meat that the meat is not cooked correctly. Since then I vary rarely ever use a "steak knife" to cut my steaks, it just isn't needed. As a side note: whenever I go into a restaurant and the server ask me if I want a steak knife I tell them "If I can't cut the steak with a table knife, then the steak isn't cooked correctly." I've gotten more than a few strange looks when I tell that. :-)
