That chicken was smoked by tea. If you search 茶香熏雞 in YT, you will find some video for how to cook chicken like this. You don't have to go to Nantou for this, tea smoked chicken are everywhere in Taiwan's traditional market. You can even buy it online. Just search: 茶薰雞 or 薰茶雞 or 煙薰茶雞
I live in the Hsinchu area and I have to agree that the Hakka food I've had here has been awesome. Really love this one dish called "Hakka fry", lei cha and Hakka noodles. However the best food I've had in Taiwan was still in a restaurant in a small, mostly aboriginal town called Dong'ao on the east coast.
You sure have upped your RU-vid game from a few years ago. I remember the hungover Prossie just rambling down a street, or the moto vlogs that mostly ended up with you sitting at the side of a road with a broken down bike. As soon as it becomes easier to travel, Taiwan is our first country to revisit. We have told everyone we know about how great Taiwan is and friendly people you will ever meet. Plus that chicken looked amazing.
That little girl is so cute. Prozzie is good with kids. In one of your videos, the way you play with kids , eat pizza etc, shows you are very affectionate with kids.

I feel like we as Taiwanese, or me at least, have been overlooking our aboriginal cultures for too long. This is something that I didn't realize until I lived in another country for a while. The closest experience I had was in 大同部落, deep in the mountains in Taroko National Park. Great job on making contents with such depth!

The one that you said you found difficult to pronounce is "radish chicken" and the radish has been marinated + sun dry. As for the BBQ chicken and duck, its difficult to do it yourself because not only they use tea to smoke the duck and the chicken, they have special stove as well to smoke the meat.

I think the food in the bowl is 'betalnut flower' (binlanghua). And the soup is dried white radish chicken soup. You can find dried white radish scrambled egg in many restaurants.

I grew up in Nantou, the amazing place is almost mountains and it is the only one county without shore line in Taiwan. Ah, also, there are many tea shops, that make me miss my grandpa so much, my beloved grandpa.
