@Laura in the Kitchen , to peel all that garlic, take 2 "metal" only bowls of same size or 1 can be a little smaller, place all your cloves in a bowl/larger one if that's the case & shake vigoursly for 2 minutes in the bowls which are made into a dome( cloves in larger with smaller on top like a ball/dome) prior to shaking & all the peels/skins will come off, then smash/slice, etc... whatever you need to do.

@Laura in the Kitchen, I like garlic, I like garlic bread, loafs, sticks, knots, unfortunately, "knots" are "not" for everyone, lol, they just like garlic bread, but these look delicious
Hi Laura, My family in Ft Lauderdale owned an Italian Restaurant called Casinos and they made the garlic knots a little different. I could eat them all just for dinner. They used the pizza dough and brushed them with vegetable oil, thyme and garlic salt. Garlic salt I guess because they didn't have the time for fresh garlic. They were to die for. I will try your recipe as I haven't quite been able for some reason been able to duplicate them the way they did them. The restaurant closed years ago.
