Another reason to leave your grill “dirty” after grilling is the oily crust provides some protection from rust or corrosion. Especially in that salty coastal air.

Simple, fantastic recipe. Mixed up the marinade mid day, about 3 hrs in the marinade. 15 mins in the air fryer on the grill tray. Amazing.

Sam!! I can’t thank you enough for explaining why you do what you do to the cuts of meats, and the grill....and you guys make things short and sweet and get to the point without dragging it out AND forgetting to show steps. I just happened to find your YT channel and can’t stop watching. I’m a newbie at grilling BUT I cannot stand chicken because it’s ALWAYS SO dry!! Maybe I’ll come back to eating chicken again. Thanks!!

Here are a couple of tips that make assembly slightly easier ru-vid.comUgkxCx5fHawkK9OoV-ojFrY8JLnZrFwAmvUt . 1) One person can assemble, but if you have a buddy to help, it will make it go faster - especially steps 1-3 and 8 (the legs aren't heavy but can be difficult to hold while screwing things in). Step 8, 1st part will take some time unless you have two more hands OR are really lucky. 2) Use a socket wrench! 3) Step 7, 3rd part - the flame carry over tube has an open side, MAKE SURE THE OPEN SIDE IS FACING THE FRONT. If it's facing the back, the tube won't work. 4) Step 10, 3rd part - if you don't have small hands (I don't, they're gigantic) getting the nut on is really difficult (but not impossible). It took me about 4 hours to assemble, but I took a "union break" every 60-90 minutes and ate a quick lunch. Also, I'm really OCD so I took my time, looked at the instructions carefully, and cleaned up as I went.

Over the years I’m always being told “ you should do a channel”, “you should open your own place”, well after binge watching just about all your shows, it’s apparent our shows would be eerily the same. A quick bit of foid nerdom: When you heat up the gunk on your grill it's not really being melted off. What's happening, is that the fats in the food you were cooking are polymerizing, or turning into plastic sort of. Also, on a microscopic level, the gunk is attached via tiny little holes in the metal rods themselves. The heat is causing the metal bars to expand which makes those tiny holes bigger and release the grip on the gunk.

It really isn't. It will make you use slightly less fuel and time but say you used and acidic marinade on something you cooked on the grill, it will corrode the exposed metal while you wait until the next time you use it. even if it is not acidic it is not great. leaving food on is always a bad idea if you want the grill surface to last.

@@tatg69 I was commenting on the fact that people die from leaving their grill/oven/stove going as they eat and forget. Sam made a good point to get into the habit. Also, I am not sure what acidic marinade will persist without caramelizing or dripping off the burners after a full cook and cooldown cycle.

Throw the wire brush away for sure-too many cases of people accidently ingesting one of the bristles that all too frequently fall out. Easier than you think to do, a good friend of mine wound up in surgery for one.

Just only push the wire brush one way, so that you're not bending the bristles back and forth(and thus risk breaking them off). I just always brush away from me with mine. Problem solved

This is awesome! I love the Mediterranean flavors of this! One of my favorite summertime chicken recipes is: 2 Chicken breast cut into one inch chunks Juice of 1 lime 1/4 cup olive oil 1/4 cup chopped cilantro 1/2 medium jalapeno pepper minced 2-3 cloves garlic minced 1 tablespoon apple cider vinegar 2 teaspoons brown sugar 1 teaspoon ground cumin Salt as desired Marinate chicken chunks for 1-3 hours, Skewer chicken and grill until done! Trust me, you'll love this! Can be made into quesadillas, tacos, or whatever else you can imagine!

I made this for 20 people and it was awesome ... started with 7-8 lb of chicken breast, prepped it as described and let it marinade for 2 hours, grilled it fast on a very hot grill and did not overcook. When cooked, I cut it all into thick strips for everyone to make their own chicken tacos with taco fillings. Really great, the guests ate it all.

I don’t know how I came across this channel, but after a few evenings of watching the channel, I worked up the courage to try this chicken recipe on my new gas grill. After finishing, I realized I’ve been cooking chicken wrong my whole life! I flattened the chicken and got it nice and even. I was amazed at how well it cooked and the grill marks blended with the rosemary and red pepper flakes made the final product look amazing. I cut the meat up into strips and then once again into bite-sized morsels. The flavor is great! Now, like most of you, I’m on to the next video excited to try something else here. I’m not the greatest cook, but this simple chicken recipe has leveled me up a notch for sure! Many thanks!!! 👍😎

FYI Sam, the small openings in the gas tubes are clogging up and that is the reason not all sides light on fire properly. You need to scrape off gunk that has built up on the openings to allow the gas to properly flow through! Then burn off the last meal at the same time. Also always marinade the grates with some type of cooking high temp oil after you cleaned them just like a hot iron skillet the end result is you spend less time cleaning and if you prefer oil the gas tubes lightly as well. The flame is always hottest at the top not the bottom! Happy grilling!!

Best damn chicken I've ever grilled! I didn't have a lemon. Olive oil, kosher salt, fresh cracked pepper, minced garlic (cause I'm too lazy to peel fresh garlic), a little granulated garlic and red pepper flakes. I beat it, put it in a bowl to marinate while my charcoal grill was getting ready. Cooked it exactly the way you said. It is so full of flavor and juicy. This is the only way I will do grilled chicken for the rest of my life. Thank you!

He does actually mean 45 degrees. If you turn in 90 you get ugly square markings. 45 degrees gives you those beautiful diamond lines on the chicken. Another little tip...lay the chicken on the grill with the top of the piece facing 2 o’clock. Then turn it so it’s straight up and down...top facing 12. Happy grilling!!!

Loved your process for cooking chicken and especially your grill cleaning tip. I never thought about using the 10 minutes before cooking to both heat the grill and clean it. I am however, always concerned about using a metal bristle brush to clean as there is the possibility of of unseen bristles finding their way to your food. Check with Greg Rempe. One of his monthly interviews is with a guy who is on a big campaign to ban metal bristle grill brushes. Love your videos.

I watched a video about a lady that swallowed one and did a lot of damage and i got super paranoid about it. A few days later someone brought some grilled food to work. Guess who ended up with a grill bristle in his gum? Now I’m super duper paranoid lol i triple quadruple check the grill and food for bristles.

I cook a lot of chicken and it always comes out so so. I can never half a breast correct, until now. I cut with the grain until now. I have only left my burners run on high and forgot about them for twenty or thirty times until now. You are awesome Sam! You never make us feel like the complete morons that we are. Honestly the BEST way to grill chicken! So perfect and tender every time. The only thing that was causing me anxiety was using zip lock bags every time to flatten the chicken.. I’ve found that using a baking wax sheet works just as well - for all you sustainability folks out there 😉

@samthecookingguy here's a trick for cleaning the grill that I just learned today. It works quite well: when you're burning off the gunk on the grill grates themselves, first crumple up a sheet of foil a bit (not into a tight ball, just enough to put some wrinkles on it) and then uncrumple it back into a sheet. This stiffens up the foil a bit. Put this uncrumpled sheet over the grill, and then bring down the lid, and blast it on high. The foil reflects heat back down on the grate and holds the hot gases on the grate itself better than if it were to all just rise through the gaps between the grate bars. After a few minutes, all the stuff on the grate will have burned to ash, much faster than if you were to try this without the foil.

lol before I even started watching the video I was ready to comment about the 5 minutes not including prep work. Also, the last time I took the food off and cranked the gas to clean the grates, I forgot about it. Thankfully the tank was fairly empty but I now use the preheat phase to clean the grill. Another gem, thanks for sharing.

Sam, here's a tip. Next time you finish cooking on the grill, put a piece of aluminum foil on the grate, reflective side down, and shut the grill off and close the top. The residual heat and reflective heat from the foil will clean the grates. Next time you use the grill, toss the foil.

A note on that wire brush you used there...DON'T use those! My sort of step mom had to have emergency surgery because a piece of the wire got stuck in her throat in a very bad spot! Just sayin so people are aware and might want to use something else.
