Very nice, I've been experimenting with homemade teriyaki sauce for about 3 years now and have found this one to be so simple and delicious. I made it tonight with a simple twist (code for I didn't have all the ingredients) I used 2 tbl spns of Brown sugar instead of white and I used 1/3 C Rice Wine Vinegar with 1/2 C Soy. Was Amazeballs

Its pretty much it's own preservative. Salt, sugar, and alcohol will keep anything gross from growing in there.

Yeah, I use brown sugar with a tablespoon of honey. Definitely takes it a new level. I’ll give the maple syrup a go, next time. 😃👍🏻

Great tasting and easy to make sauce. I added abit of red wine in the cooking process. I wanted a bit of spice I added the sauce to a bowl with a spoon full of korean spicy chili paste. Turned out really good with a great sweet and taste. Thickened it up with abit of cornstarch slury

Traitionally, I think so. Both sake and Mirin are akcoholic, and they are both key ingredients of teriyaki.

The recipe is simple. The hard part will be locating sake and mirin in the tiny countryside island I live on. Guess I need to go shopping, cuz I really don't wanna have to buy teriyaki sauce every single time I wanna make a dish that requires it

Thank you for the vid, i have 1 question though regarding the Mirin. When looking at the store i see some Mirin with around 14% Alcohol and some without alcohol. Which is the right one? Thank you!

Thank you so much for this recipe! I've tried teriyaki sauce in Japan and it was fantastic, unfortunately i find teriyaki sauces made outside of Japan way too sweet. I actually avoid ordering anything teriyaki based when I eat in Japanese restaurants. Thank you again for this cos I can make it at home! There is no one else I trust with Japanese recipes other than you. I will definitely give this a try.

So I couldnt find mirin, but i did find some cheap sake, I replaced the mirin with plain sake, added more sugar and 4 teaspoons of seasoned rice vinigar, end result is good, but I have nothing to compare it to. This recipe made 2 empty soy sauce bottles worth. I'm letting the mix sit in the fridge over night before I make my chicken. Thanks for this video!

Even if you add the full 90g of sugar, this is still only works out to be 13ish grams per 100mL, which is 1/3 of what is in the leading brands. And it is delicious.

How to make teriyaki sauce 1. Get a measuring Jug 2. Put 80mg of sugar 3. Add 200ml of Sakai 4. And 200ml of mirin 5. Then add 250ml of soy sauce 6. Put [Error] that I didn’t mention to have on the stove make sure it’s on low or medium 7. Once made sure that the sugar has dissolved pour sauce into a bottle of whatever your using

If you want to convert to Ajitama divide your chosen amount of teriyaki sauce by 4.333 to get the amount of soy sauce required for dilution

The only major change I'd make to this recipe is to simmer it a bit until it reduces slightly. Simmer very gently 10-15 mins until small bubbles appear around the edges of the pan, or a clean spoon dipped in it gets a light glaze that sticks to the spoon. It should still be very runny - like genuine maple syrup.

I actually wouldn't recommend that. The difference between reducing a large amount in a pot and reducing/caramelising in a pan during cooking is that caramelisation removes some of the sweetness of the sugar. Commercial sauces are often thickened or reduced, which I find makes them too sweet. A reduced texture also tends to make the final glaze too thick when used in the normal Japanese way.

Yes there is. These are just the base ingredients. Which give you a good teriyaki sauce. But a better sauce contains ginger, garlic, and even cooked up with some chicken pieces. If you watch a Japanese chef make teriyaki sauce, he uses ginger, garlic, and some use chicken for even more flavor. These ingredients of course are not mandatory. But for the best flavor, you want to use them.

I tried this and it was way to salty I was so disappointed. To be fair the Mirin and Sake also had sodium. Didn’t know how to fix it so tossed it. I didn’t want to give up since store teriyaki sauce doesn’t work for me either. I ended up doing the 250ml with Lee Kum Kee Less sodium soy sauce (500mg of sodium per 15ml) and 90g of white sugar, and leaving the rest the same. Loved it!!

Just found your channel and planning to try your recipes. I have some questions though: 1) My Asian market has like 4 brands of mirin and the first ingredient for all of them is corn syrup and/or high fructose corn syrup. What's up with that? That can't be traditional can it? 2) The cooking sake they have is called "salted sake." I presume it's salted so people won't buy it to drink as a cheap alcohol. Does it work for this recipe? 3) The mirin and soy sauce I have both say they need to be kept refrigerated. You say this sauce can be kept in the pantry. Is that really ok? Thanks!

depends, do you keep store bought in fridge after opening? I would store it in the fridge just b/c some days are so hot & in winter the furnace is on. I'm sure he said put it in your pantry I always keep my sauces in the fridge. Oil and vinegar things on the counter :) Just keep out of direct sunlight.

1. No 2. When you cook with it, it will reduce in the pan and thicken naturally. Doing it this way, the teriyaki sauce will combine with the pan juices to create a *much* more flavorful sauce.
