Darn, I just canned up raspberry jam last night and hadn't checked RU-vid for new videos yet - wish I'd tried your recipe! I felt like I knew everything I needed to know about canning jam, but there's so much info here. The last batch of strawberry jam I made didn't set and I re-did it with lemon juice, fresh squeezed 😯 Didn't know not to do that! Next time I get a pile of raspberries I'll be trying this recipe for sure.
I always used to make jam with a ton of sugar and pectin until I learned the citrus peel trick! The low sugar is so much tastier because you can actually taste the fruit! If you like blueberry jam, you use the same recipe.
