🍗🥗 The #BEST BBQ CHICKEN 🥗🍗
I used to make Peri Peri chicken in my thermomix but after setting off on our travels and getting rid of the thermi I had to adjust the recipe for freecamping! My recipe is never the same I run by the measurements of 'A bit of this and a bit of that'... but I have written it down to give you an idea.
So here it is!!
1 or 2 grated Onions
5 teaspoons of Crushed Garlic
2 teaspoons of Crushed Ginger
A squirt of Lemon Juice
A glug of Oil
Salt and Pepper
About 50grams of Sweet Paprika
Half a packet of semi dried Parsley
1kg of Chicken Thighs
Mix it up, pop it all in a large bag let it marinade all day in the fridge (or overnight is even better!!)
Chuck it on the BBQ until cooked and enjoy!
* We always mix up a double batch (yep, 2kgs of chicken!!) freezing one bag for an easy tea another night.
* Tear the leftovers (if there is any!) and pop in some salad wraps with a dash of mayo. These make for the most scrumptious lunches on your day trip adventures!... You can thank me later 😋😋😋
