Delicious fall apart Pulled BBQ Pork in the Instant Pot pressure cooker with a very fresh Pineapple Pepper Salsa
1 3lb Boneless Pork Butt or shoulder
2 1/2 Cups BBQ Sauce, divided
1 1/2 Cups Dr Pepper
4 Tablespoons Apple Cider Vinegar
1/2 Cup Brown Sugar
2 Teaspoons Garlic Powder
1 Teaspoon Onion Powder
Cook in pressure cooker instant pot for 45 minutes. Let it do a manual release for 10 minutes. Add additional BBQ sauce and shred
Pineapple Pepper Salsa
1 Pineapple, cubed
1 Red Pepper, diced
1/2 Poblano pepper, diced
1/2 Onion, diced
1 Tablespoon fresh cilantro, chopped
1 fresh lime juiced
Combine all ingredients
Potato Skins
Potatoes, cleaned
8 oz Sharp Cheddar Cheese, grated
4 Oz Shredded Mozzarella
5 Slices of bacon, brown and chopped
Sour Cream for serving
Salt
Vegetable oil to brush potatoes
Preheat oven to 400 degrees Fahrenheit
Brush potatoes with oil and sprinkle salt. Bake 45 minutes to an hour until very fork tender. Slice potatoes long way and scoop out extra potato and set aside for another use.
Combine cheese and bacon and sprinkle liberally over all potatoes. Reduce oven temperature to 350 and bake 15 minutes and enjoy!
