For stainless steel pans, people probably perform the water-ball test to ensure the pan is non-stick. Heat your SS on medium/low and about 4min in add a drop of water, if the water forms into a single ball and slides around your pan, your pan is ready to go. If not, wait a little longer. Then add your fat/oil and cook. My eggs never stick to my SS pans using this method and cleanup is easier.
