Hank, I actually spoke to my local meat market. They use achiote paste, vinegar and salt to marinate some meats they sell. I got all the info on a few meats they sell, they use basic seasonings. Which surprised me, but they are good. So ill be showing some of those recipes in the future. This recipe was just my twist, but inspired by what they told me. That meat was liked by everyone that ate it, I know I seasoned with salt to my taste but it balanced out in a taco for others. Thanks Brotha!
That smoker is nice. Just got an Oaklahoma Joe's offset myself. But yours has a nice larger firebox chamber door, which is nice. I also like the double level cooking area. Seems well built, too. But @ $1800. Yikes!
I meant to add, I am a huge fan of Chef Merito’s Chicken Seasoning & the Carne Asada seasoning. I marinate Tri-Tip with the Chef Merito Carne Asada seasoning and an entire large can of pickled jalapenos - juice and all. Low and slow, indirect and slice thin against the grain. Perfection!
Good video. Try using beef cheeks if you're feeling froggy. They're tough as nails, but if you cook the dog shit out of them all that connective tissue turns into lip smacking, sticky collagen.
