Today we're making Italian zucchini soup with broken spaghetti. Traditionally this soup is made with cacuzza and its leaves (tenerumi) but this version makes this classic a whole lot more accessible. I hope you enjoy it!

ITALIAN ZUCCHINI SOUP PRINT RECIPE:

INGREDIENTS WITH GRAM AMOUNTS
½ pound (227g) spaghetti - broken into bite-size pieces
5 tablespoons (75g) extra virgin olive oil - plus more for serving
1 medium onion - diced
6 cloves garlic - chopped
¼ teaspoon crushed red pepper flakes - optional
4-5 medium zucchini - cubed
1 14-ounce (400g) can plum tomatoes hand crushed, see notes below
6 cups (1440g) water or stock - plus more if needed
salt and pepper - to taste
¼ cup basil - chopped
¼ cup parsley - chopped
Pecorino Romano - for serving

This was the soup I discussed in The Sip and Feast Podcast episode 1. My Grandmother made this so many times growing up. Using zucchini makes it a bit more accessible than using the traditional cucuzza and tenerumi (the leaves and shoots). Obviously, if you grow them or can find them in the store use cucuzza (also goes by snake squash or gagootz) but I think this version is really nice too. Definitely doing this at the weekend... but with addition of some pancetta. Out of interest, why wouldn't you put the pasta in the soup to cook so it takes on the flavour?

Linda here…that line was hysterical. My husband was walking by, heard that and laughed out loud. He said “Follow the recipe but don’t follow the recipe!” We both cook without recipes but use them as inspiration. This one is definitely inspiring.

As the Italian women of my childhood would demonstrate when I asked them for a recipe, holding up a handful of ingredients, "this much". They had made those old recipes so many times, they could do it with their eyes closed and never owned a scale or a measuring cup. Their houses smelled amazing and there was always room for one more to squeeze in at their table. As a kid, I could never have imagined how much these memories would mean to me later on. Thanks for bringing back those days with this great soup!

I was raised by my Grandparents, both from Naples. My grandfather grew so much gagootz, we had this for supper at least once a week during the summer, along with a crusty loaf of semolina. (Yes, we ate in the downstairs basement kitchen watching Mike Douglas show at 4:30). My grandmother called it “Jumboth” which I thought she made the name up. I also thought she invented it, pretty much using any vegetable that was laying around. Years later found out it’s spelled ‘Giambotta’. Same recipe as Jim’s, except she used potatoes instead of pasta. This dish brings back many good memories. I’m going to make it following Jim’s recipe, as he never disappoints. What is it with the basement kitchens? First time renting after leaving home I rented from Italians and I was first floor and had to listen to them down there cooking and arguing into the late night. WHY not cook upstairs on the second floor? When I mentioned this to friends they would laugh and say Are they Italian? but no one ever explained.

@@PhotoKazLol. I found out the answer to your question when my husband took me home to his home town in Italy. Their homes had working kitchens that were almost a mix between barn and house. All preserving and hard work was done there. When people got enough money they would install a pretty kitchen inside the house. It didn’t necessarily even get used much.

You are the first cook in the history of RU-vid that nailed the percentage of salt for cooking pasta 9:25 (and I am old enough to be your father and have witnessed the entirety of the internet, Luke :-) The sea is 3.7% and above, which is much too salty. Meats and veg need about 1%, but pasta water is 1.5%. Jim, you have won my "Grosso Paisano" award for today!

I cannot believe that you're making this: I have this cooking on my stove as we speak! The only things I do differently is I also mix yellow squash in for color, I use fresh tomatoes instead of canned, and I don't put in pasta due to carbs. But otherwise, this was handed down from my Sicilian grandmother and has been a hit my entire life.

My Nana and Papa had a massive garden and grew the cacuzza, along with a million other things. This soup was a staple any time we stayed over with them, or when I'd go over for lunch between twice-a-days for football in the summer (they lived about 2 mins from the high school). I had such warm memories watching this video because of that. Another thing I wanted to say; I just love that you guys are hitting your stride with the channel. The podcast, the new kitchen, Tara's deeper involvement on camera lately. Keep doing what you're doing. We're loving it!!

I make a soup like this pretty regularly (usually ditalini is my go-to pasta in soups), and a can of cannellini is a great addition to add more protein without something like sausage whose flavor can overpower the vegetables.

I grow my own squash, zucchini, and tomatoes so I'm saving this one for later in the summer once I can harvest. I'm very tempted to add the turkey meatballs from your wedding soup recipe too since my family loves that recipe.

I agree about the anchovy and more red pepper flakes. I also would add a rind of cheese to flavor the broth (you can take out the rind when ready to eat). And, maybe cook pasta in the soup?? It would thicken the broth as well. Well done!!

My wonderful Polish grandma's first husband was from Italy. His mom taught her how to cook Italian. She made a version of this soup in the summer but she did it half Italian and half Polish. I don't remember what she put into it but I remember loving it as a little kid which was a miracle 'cos I hated veggies at that time! I know she put in a bunch of veggies since me and my brother would demolish a couple bowls of this stuff for dinner! lol I wish she would've written down the recipe though, even my mom doesn't remember what she put into it.

My Nonna made this same soup with zucchini, or kohlrabi, or broccoli or cauliflower. Whatever the garden was giving, she made this soup out of it. Thanks for the great memories, and this is dinner tonight!

It’s super hot here (Phoenix) and I wanted something light for dinner. Made this soup. Added in some green beans chopped in pieces. Put a couple anchovies in the olive oil. It was the PERFECT summer soup. Refreshing, green, healthy. We all ate 2 big bowls. Thanks ❤️!

I have watched this video 4 times now and still laugh every time you remind us to go with the flow and enjoy the process depending on ingredients we can get, what we like, the size of our pans, the personality of our stove top and oven, etc... Until sip and feast, I was much more exact and running to the store at the last-minute when I was missing the exact ingredient. Thanks to you and ur family, cooking is now so much fun and I think the love of family and relaxed attitude makes my finished product better. I am probably imagining it...but, hey, my family and guests are always happy...so 3 cheers for sip and feast and all the nonnas out there.

Very cool...my mom (0 parts Italian lol) used to make a veeeery veeeery similar dish when I was a kid and she was trying to figure out what to do with all the zucchini from the garden. From memory the only differences at all was that yes she used chicken stock, macaroni noodles and also no onions since I can't eat onions. I think she called it "cheesy zucchini soup" and I imagine she called it that since I love cheese and zucchini...looking back it was a dish you wouldn't call "cheesy" but anything with cheese in the name I'm all in for even now lol I've literally never thought of this until watching this week's recipe thanks!

This is so like the Italian vegetable soup I make every winter. I'm looking forward to doing this zucchini version soon! As a born-and-bread Philadelphian, I cheered when you got out the Locatelli Romano cheese wedge. THAT RULES! Living in the southwest, it's not easy to get it. Had my brother FedEx me some one time because I couldn't stand not having it. 🙂 Thanks for sharing your grandmother's recipe. I can't wait to try it!

This is a great recipe. I make a similar soup and serve it as a side dish with simple meals and sandwiches. Warm in the cool months and chilled in the summer. I add lemon zest in the summer version, which brings a tanginess that enhances the chilled veggies.

When I was a kid, back in the early 70"s, I lived in Rome NY. I remember we had an Italian neighbor who made this dish but, it also had broccoli in it. I remember he would give some to our family and my mom LOVED it! But I hated it! Didn't like it at all. I didn't like the broccoli in it. ... But, in retrospect, I do remember that the broccoli back then had a very bitter taste, which was very unpleasant to me. And, for the record, I absolutely love the broccoli that we have today. .... I’m going to make this later this summer when zucchini is taking over the world. I think I’ll try cooking the pasta directly in the soup…I like having the pasta starch add its texture to soups. Love your videos.

I love zucchini. I will be making this. Tip for you..when your pouring liquid or other things into a pot, a bowl whatever..pour it over a spoon that's turned over. Hope you understand. It prevents splattering. Thanks!

Soups can be pretty forgiving allowing to add other things to it to make however someone prefers. I love recipes like that because I am so picky about food. I replace ingredients a lot when I cook because I’m such a PITA 😂

I sometimes make a summer salad with these same ingredients (minus pasta and 6 cups of liquid) and it’s so good - some kind of magic synergy going on, the sum is greater than the parts. But isn’t all Italian cooking like that? Can’t wait to try the soup.

I love zucchini when it is on the smaller size verse large and seedy. I usually make something similar but I like your recipe better. I will get a lot of use of your recipe, fresh from the garden except I don't grow cheese. I DO have it in the house most times. Thank you for sharing this.

I was looking for a summer squash soup recipe that I could make with all my garden zucchini and crookneck squash that my husband would like. He doesn't like pureed soups and I'm avoiding dairy at the moment, and all I could find was pureed soups full of cream and cheese (which look great but not what I need right now). Then I thought, I bet Sip and Feast would have something for me! Here we are; you did not disappoint. I have homemade chicken veggie stock I will use to make this tomorrow, and I will add a diced chicken breast for extra protein, and now we have a wonderful dinner plan for tomorrow night! This really is a blank canvas for a great soup. Any squash can be used as a replacement. Add meat. Add cream. Do whatever you want. Just follow the fundamentals

Looks delicious..i love zucchini, we call it courgette in the uk..my mum had a great veg garden, i remember being sent out to hunt under the leaves for them!

I made this soup! Best soup I have ever made! inexpensive with everything pretty much on hand. Downside, after a bumper crop of zucchini last summer we couldn't look at another zucchini but I still wanted this soup. So I substituted carrots. I know some will think it's a dishonor to this soup, but it turned out great!

I have been making summer squash soups with zucchini for a long time (I don't have a recipe, I just use what is in season and or available, seasoning to taste. Never have I added broken pasta. I will try this, thanks!
