Aaron and Claire, I love your channel! I've already made 6 of your dishes. I am adding this one for lunch! Because of you, I am going to learn Korean.❤
Hello from Malaysia. Thanks for sharing wonderful recipes. Hope you could one day try one of our recipes especially the chicken soup. 🙏🏻❤️ all the best on your career and take care
I am Thai and study in UK. I can't find holy basil as well, so I use regular basil and add a dash of white pepper on top to mimic the peppery of holy basil. Make it taste closer to the real Kraprao :)
I've just seen a lovely version of beef pad kra pao from Thailand where the chef (Kate Wangsantia) used perilla leaf instead of holy basil to pair with beef. she said in Thailand, they consider perilla leaf to be holy basil's "big brother." it sounds really good to me.
Aaron and Claire, I love your channel, I have enjoyed it for a couple of years. I received your cookbook the other day, but the cover was damaged/dented in a couple of places (Amazon didn't use any package filler), but I was wondering if you could just message/email/respond to this comment with something like "Oh, your cookbook got damaged in shipping? Don't worry about it!!!!! " and I could print it out and put it in the cookbook? It would bring me so much joy :) Thank you so much!
I know the fried egg makes it look good, but is it authentic Thai style? My wife looks at me like I’m from Mars whenever I put a fried egg on any food like this!!! I say Claire likes fried eggs, but that doesn’t really help… 😂
Thai restaurants especially street vendors made fried eggs that way, crispy on the bottom and you can choose the doneness of the yolk as some prefer a runny yolk while others prefer a cooked yolk. And a funny fact, fried egg could be eaten with almost every dish in Thailand. Serve it on top and that makes the dish more appetizing and more delicious. (Trust me, I'm Thai 👍👍)
Pad Prik Bai Ka Prao(ผัดพริกใบกะเพรา) aka Pad Ka Prao(ผัดกะเพรา) = Stir-fried Chilli and holy basils Once you used other kinds of basils, it is no longer original Pad Ka Prao. I understand that it is hard for you to find holy basils but that is the fact. Even you use the Thai basils, it is still not that same. (Thai basils - โหระพา - Ho Ra Pa) And...no shallot, we don't put it here in Thailand.
The sauce itself is not spicy at all, so you can skip the fresh chilies or use bell pepper just for the texture. FYI, you can always make our dishes less spicy by reducing the chili pepper flakes or skipping the fresh chilies. Hope you guys enjoy it! 😁🙌 aaronandclaire.com/pad-kra-pao-thai-basil-stir-fry/
@@AaronandClaire I followed your instructions and watched the video 10 time it was so delicious this is my first time using fish sauce (I'm Jamaican) I'm blown away. Ps I used too much chili but I'll use bell peppers next time.
Made this for dinner last night. So good! It definitely needs the full amount of Basil. And I used a Serrano pepper, since I can’t get Thai chilis. It was the perfect amount of heat. Also, the crispy fried egg is necessary for texture!
Hi Aaron, its always difficult for me to get Thai Basil, good idea I will try it next time with the german basil, I like so much your cooking videos, always delicious and always new ideas, thankyou so much ❤ 👍
The word "Kra pao" means holy basil. You should have called this dish "Pad Horapha" as Basil or sweet basil (as you have used in your video) in Thai is "Horapha". But really, you should not use regular basil, it has a totally different flavor.
No no no dude, you gotta put garlic and chilli into the pan first and wait a bit second untill the chilli smell's kick up then put the meat then sauce. Once the meat is rare then put basil in. **garlic and chilli first is the key
I make this dish a lot. The flavor is a lot better if you put the garlic and Thai chili peppers in the oil first and fry it for a minute before adding the meat. Also, the sauce measurements in this video look like it'll be way too salty. For the same amount of meat, I use a similar amount of oyster sauce, sugar, and black/sweet soy sauce, but I only use 1 Tbsp light soy sauce (a 50-50 mix of Golden Mountain Seasoning Sauce and Healthy Boy Brand Mushroom Soy Sauce) and only 1 tsp of fish sauce. The video recipe's suggestion of 2 Tbsp soy sauce with 1 Tbsp fish sauce and 1 Tbsp oyster sauce even looks overly salty on paper!
Many of us Thai like this dish to be kinda smoked and dry which adds extra smell and flavour so it is needed to fry the beef until the internal moisture are gone and meat becomes crusty. You wont be able to achieve that if you put garlic and chillie in first since they will be burnt. Just my 0.02$.
Aaron is absolutely right. Tom yum and Padthai tend to be more famous among foreigners. However, the most common dish in Thailand is this Pad Kra Prao.
Use dry chillies instead of fresh chillies it will be the dish to the whole new level of deliciousness. Don't add onions or shallots to the dish because the scent of onions will drown out the aroma of holy basil.
Holy Basil is a must, that is the kra pao of the name. There is no real substitute for it but it's hard to source. It goes bad about a day after picking the stalks from the plant and does not freeze well. Kra Pao with crispy pork belly is the ultimate :)
@@Fredrik871When you blanch basil, does it change the flavour? Does it make it taste more like dried basil, for instance? I've been afraid to try because I hate the taste of dried basil (it makes me think of crappy jarred pasta sauce).
Pad Kra Pro you have to use holy basil if not its a crime for Thai people If you you use original basil or thai basil It wil be pad horapa not pad kra pro a diffrent dish
This looks amazing Aaron! 😁 And I love the crispy fried egg on top! 😘 For years I've been trying to find a good recipe for Hot and Sour Soup. We had a local restaurant that made the best but unfortunately they moved back to Thailand and we're still craving it! This soup was so delicious and perfectly balanced with the right amount of heat and sourness! Just thinking about it makes my mouth water and I long for it again! We've tried many other restaurants over the years and none have ever come close. 😔 Do you happen to have a recipe to share? I would be eternally grateful, I really need this soup again before I'm gone! 🙏 Thanks for sharing another great recipe! 😍
It's not a curry soup but a clear based broth. With mushrooms and tofu, red pepper flakes for the heat and vinegar for the sour and a few other things that makes it so good! It has a thick broth, maybe arrow root? I've searched for recipes every where but I can't find one like I tasted. This mother-in-law from Thailand makes magic in a bowl and the recipe probably isn't even written down! If I ever taste it again, I'll know it's the one! I've been searching for 25 years and I won't give up until I taste it again!
I've done most of your recipe in the past and they all were amazing. Tried this one and was heavily disappointed, I was already affraid that 2 TBSP of Soy + 1 TBSP of Oyster + 1 TSB of Dark soy for 1.5 TSP or sugar was too few to balance so I added more sugar and it stil ended up being so salty it was completely unedible. Usually your ratio are at least 2/1 in terms of salt/sugar so I'm a bit confused but it was probably me doing something wrong. Any help would be appreciated
Pa pao is mean thai basil. If you use basil it gonna be basil stir fry (pad ho ra pa) not pad ka pao. It's also delicious but smell and taste are little bit not the same(delicious though 😂😂) However i kind of understand that it expansive and hard to find thai basil in korea and other cold country.
Awesome, I love Thai food and Aaron's take on foreign cuisine is always on point! Will try soon! How about some Korean Pastries/bread for a change? I'd like to discover some, if you have any for which we could get the ingredients outside of South Korea.
This is not Pad Kra Pao ผัดกะเพรา 1. 99.9% of Thai people don't eat beef 2. Thais use "holy basil" grown naturally 3. Pad Kra Pao is actually Laos 🇱🇦 dish 4. Thais don't use Mexican peppers.
A fun trick for the egg is to separate the yolk and fry just the white first. Then when it’s almost ready, add the yolk on top and spoon some oil over the yolk to seal it to the white. So good, love this dish!
Enjoyed watching you making Thai food, I prefer pork pad kra pao over beef because pork will give out better flavor for this dish. You should grow Thai holy basil because it gives out such a wonderful aroma that is totally different than regular basil. Or go with Asian long green beans, worked well with kra pao too.
There was a restaurant I used to go to in California called the lucky elephant. I moved out of state and I miss the Thai basil beef. Ty for this recipe. Will try it ❤
Thai way of cooking this dish would be 1. brown the garlic and chili in the oil then add the meat. 2. Add fish sauce, soy sauce and a dash of sugar to round up the flavor 3. Add the Holy Basil leaves and oyster sauce, stir fry well before turn off the heat to get the oil out of the leaves . If you can' t find fresh Holy Basil leaves there are alternative such as frozen holy basil leaves or holy basil leaves in chili oil. I used both when there is no holy basil leaves. Another alternative is Hairy Basil leaves which is a more pungent smell but might even be harder to get. Sweet Basil leaves or Horapha is to use in curry (red or green).
As others have already mentioned, holy basil is not always available in the UK & I find pork, prawn, or chicken complements the dish far better than beef. Also, minced meat of any description in the UK isn't good meat, My Suphanburi wife always minces a piece of meat herself with two heavy knifes.
I am Thai.I recommend you one super delicious dish"Ped Yang Pimine"(Pimine roasted duck).Pimine is one city in Nakornratchasrima province. If you go Thailand don't miss it.(pad kra prow use fish sauce not soy sauce and holybasil not basil)
One of the great Thai dishes, maybe the pork version is more famous than the beef. BUT when you get it in Thailand, get ready for the heat, cuz they crank it up to 100!
Yes, Yes! this is very nice and delicious looking Pad Kra Pao we don't need those fancy garlic sauce or chilly jam or bell pepper and onion just plain old recipe and Voila! you got yourself a good Pad Kra Pao.
Italian basil tastes closer to holy basil than thai basil. So, if you're in America or Europe, just use regular basil. Thai basil is usually used in curry dish.
Yes, they are 3 different things. 🤣😆What I mean by that is Holy Basil is the one this dish originally calls for, Thai Basil is just any basil from Thailand, and regular Basil is Italian Basil! 🙌🙌🙌
@@AaronandClaire that's good to know... I am taking this dish in California in a Thai restaurant: Gra Pow seafood... and it tasted so good. So I am suspecting it is not using Holy Basil, as it is hard to find in the US. So it probably is using Thai Basil. It too has a fried egg on top of the rice.
