at the end of an extended visit to an incredible place in brooklyn, I asked the bartender for a Ti' Punch for a nitecap and left to use the restroom. no more than two minutes later I returned to my seat to be greeted by the most elegant presentation of a 'classic' Ti' Punch you might get in Martinique (replete with full bottle and swizzle, fancy glasswear, etc.). To top it all off was this intricately decorated lime that stopped me in my tracks. "How long did that take you?", I asked. "As long as it took you in the bathroom." she replied. Check-mate. Nearly two years later, I now know it's a 'tribal lime'. thanks Leandro.
Tiki drinks have really become my favourite category of cocktails over the last couple of years, so I'm really glad you're doing a whole series on it^^. There are so many interesting and surprising flavour combinations and such a wide range of creamy, tart, light, strong, simple and complex drinks
A belated thanks for this one Leandro. I made it this evening with Smith and Cross, El Dorado 12 year, and St. Elizabeth. It's so good it must be illegal. It's in my rotation now for sure.
Absolutely love the idea for this new series! Of course, some of the old recipes from Berry's books (not his originals) seem like stinkers from looking at the ingredients, but I'd love to know either way! Especially excited for when you get to the Pétion from Potions of the Caribbean, since I want to hear your spiel about Clairin.
I've had Jeff Berry's books AND his app for years now.. and somehow this gem escaped me. This truly IS one of the best "simple" tiki drink recipes I've ever had. Thank you for sharing
Love your new fruit press. You mother in law is a smart shopper. Excellent gift for someone in your profession. Thanks for letting us all benefit from it by using it on your RU-vid videos. Love watching! I especially love watching the pebble ice cocktails you create and recreate. Keep up the great work.
I've made most of the drinks from berry's books and the ones you have to watch out for are the ones that are in either the Grog Log or Intoxica! but NOT in his remixed book. He dropped a lot of bad drinks from them when making remix. There is a very good reason for this.
This was the first tiki drink I started with when I began my deep dive into tiki 4 years ago. Hardly anyone has heard of this drink. I make my own pimento dram (ie allspice dram) and often play with different combos of rum - my fav is an ounce of Demerara (usually Lemon Hart) and an ounce of Plantation Original Dark.
@@robertwatson4840 I’ve stopped watching most of the Barfly vids at release because they got me to crave drinks at 7 AM in the morning 😂. I like The Ancient Mariner very much and have at least one weekly. Besides a great flavor it is one of the simpler tikis to make.
Tiki drinks FTW!!! I love experimenting with Tiki flavors and proportions. There's just so much that can be done, with a number of different flavors and liquors.
I agree the ruby red grapefruit juice is a better option for this drink. I’ve done it with white grapefruit juice as well, and the red just works so much better. Also, try the Hamilton pimento dram, it pwns the St Elizabeth 😬
Glad to see you do more tiki drinks! I have fallen in love with that subset of cockail drinks over the last year and enjoyed seeing you on Spike's Breezeway Cocktail Hour. Cheers!
woah! I haven't watched an episode in a long time after I left the industry during the initial Covid outbreak. The "new" set is incredible! my greatest compliments to you all.
Really got into Tiki at the start of the Covid lockdown last year. Smuggler's Cove was my first exposure (after various YT videos), and have added Beach Bum Berry books to the collection as well. My first cocktail with Allspice dram I didn't love it. My tastes have evolved since and I love it now. I've got quite the rum collection now and am looking forward to this new series!
Boss idea…..I am ready for this ride!!!! My Tiki game is weak ….. just so many ingredients….but I’m making all spice dram this weekend….Thanks for the videos love them all!!!
This is awesome. Excited to see you go though the BBB Grog log. I get a lot from watching your channel. You and Marius are much appreciated. What’s funny is I have the book and all the ingredients(maybe gotta go get some grapefruit)and never tried this recipe. This will be my next cocktail for sure. Thanks again
I was just about to ask if you worked at Cole’s!! I used to come in for lunch and you made me the absolute best penicillin I’ve ever had every single time. We’d discussed that I’d never had a gin martini I liked. You were going to change my mind…but we never got around to it. Anyway I’m glad you’re doing well!
@@TheEducatedBarfly I've been following your channel for a while and just kept thinking I was crazy, that it couldn't possibly be you. I'll have to give the martini a go! I use your whisky sour recipe all the time and if I can brave the egg I think I can tackle a martini...although I'm sure it would be much better made by you paired with a french dip ;)
Tried this tonight. A few takeaways: My wife prefers Jet Pilots which is kinda similar... Just a few extra ingredients and cinnamon syrup instead of allspice dram (ok, a completely different drink). My fresh squeezed lime juice overpowered the drink so I had to scale back on lime. I also felt like I needed to increase the amount of simple syrup and allspice dram to balance it to my liking. The only demerara rum I have ready access to is Hamilton 151 so I went with .75 oz of that and 1.25 oz of Appleton Signature. Ancient Mariner is a great drink that reminds me of grogs I've made. Fun to tweak!
If you don't want to make all of these yourself you could go to Tonga Hut in North Hollywood. They have every drink on the Grog Log and the bar tenders/owners are super knowledgable. If you do the entire Grog Log in a year you become a member of the League of Drooling Bastards. :D I'm an honorary member
Have you thought about changing the simple syrup to Demerara syrup for your Tiki drinks? The extra molasses flavor goes a long way with improving the rum character in Tiki drinks. I believe Martin Cate and other Tiki bartenders advocate strongly for that point.
Hi Leandro, great video! Just one thing that I think needs more attention. Appleton Estate, whilst being really great rum, isn't quite Jamaican Rum. Yeah, it is made in Jamaica, but it is more British (talking rum-wise) than French. It is not Funky, very mild and not offensive, like for example Doorley's (by R.L Sea aka Foursquare). A true Jamaica rum, with high esters that resembles banana and grilled pineapple, as well as bit of acetone and asphalt would be Hampden 8, or even Habitation Velier Worthy Park. The rum world nowadays is on its way to be one of the greatest beverages markets, and even now you can find a lot of great examples. Keep up the great job!
As a tiki lover, I hope you’ll try this drink and let me know what you think. To me, it is a mescal-based tiki which is unique. I got the ingredient recipe from a DC restaurant called Le Diplomate. The drink was called Green Revolution though I do not see it on their menu online today. I had to come up with the volumes myself. It is equal parts (3/4 oz) green chartreuse, mescal, Falernum (I use velvet), lime juice, and pineapple juice. Cheers!
If you go through the entire book , then I will be here for each one! I have been fascinated with Tiki ever since my grandfather took me to Trader Vics in Chicago back in the 70's where I would drink virgin Bahias (Pina Coladas by any other name). Now if you could find someone to recreate those Cosmo Tibits to pair with those drinks.
I'll def give this a try. I just need to reload my allspice dram. The last tiki drink I made was the Skater On Crack. Loved it. Reminded me of mai tais I've had before. Not sure if you've done that one.
Gotta say, not a fan of him reading a comment at the start of every episode but hey, it ain't my channel and it won't stop me from watching so you do you Leandro
Great stuff as always, looking forward to the series. It’d be a really cool episode to explore all the different Zombies that Beachbum includes (1934, Aku Aku, especially the Jet Pilot, etc). Besides providing multiple drinks to encourage people to buy the various requisite (expensive) rums, it’d be a cool lesson on how different ratios can completely change the feel of the same ingredients :)
I really thought I'd hate tiki, but some of my favorite riffs on classics have been tiki inspired--most recently the Paloma. I'm looking forward to this series and may even get the book on my end!
in 2013 Mike Tyson tweetet about having his face tattoo removed but in a 2016 sports illustratet interview he said that he had no regrets in getting that tattoo.
Love your videos and content. Excited to try this one! Tiki cocktail question. If you have 15oz Tiki glasses (Christmas Present) do you make Ancient Mariner for example same as your recipe calls for and just add more ice to fill space OR do you increase ingredients to match the glass (double the drink)? Thanks for the guidance! Happy 2023 to you!
First measure the volume of the cocktail and how much ice displacement fills the glass fyi the glass I use in this video is a 15oz double old fashioned glass so on this case you won’t need to do anything but sometimes the volume of a glass would call for doubling specs.
Yes, please please PLEASE... do a video on making your own allspice dram! I live in the UK and I can't seem to get it at all... Drink sounds great, so it's a shame I can't try it! :'(
So much I’d like to say here. It was fun to watch you at the breezeway. Great challenge (& it’s a big one) for the channel! I’m looking forward to the education on how complex rum actually is. And I liked the flow of the video! You guys are rawkin it! Patreon list was long..great job guys! 👍🏼
