For the Vanilla Cupcakes:
2¼ cups (270 grams) cake flour*
1 Tablespoon (12 grams) baking powder
½ teaspoon (2.5 grams) sea salt
1¼ cups (300 mL) whole milk, room temperature
4 large egg whites, at room temperature
½ cup (113 grams) unsalted butter, at room temperature
1½ cups (285 grams) sugar
Seeds scraped from one vanilla bean, or substitute with 2 teaspoons vanilla extract or 1½ teaspoons vanilla seeds paste
2 teaspoons (10 grams) pure vanilla extract
For the Strawberry Cream Cheese Frosting:
¼ cup (56.5 grams) unsalted butter, at room temperature
1 bar (227 grams) full-fat cream cheese, at room temperature
¾ cup (20 grams) freeze-dried strawberries, plus more for garnish if desired
¼ teaspoon salt
1 cup (113 grams) confectioners' sugar, sifted if clumpy
