I was just thinking what if..... whipped aquafaba was used in place of coconut fat? It surely would make it more like a lite or low fat yogurt...right🤔? I feel like nuts, coconutbutter even soaked desiccated coconut would have enough natural fat to stand up to the test🤞. Sweetened coconut flakes could also be fun. Why not, they have chocolate hummus😬 Using aquafaba would greatly cut down on high fats and calories. I mean they👮 don't call it coconut"fat" for nothing😂...lol. Aquafaba would also add fiber💃,protein or add extra fiber and protein 💪........right🤔? Aquafaba has become so popular lately because it is so stable and magical that it is even used as a whipped topping or egg white alternatives. Fact.... Aquafaba is cheap, healthy and so versatile that now-a-days something that used to be wasted is now vegan/vegetarian pot of liquid gold! 🌟. Do you or anyone know if aquafaba can be frozen then defrosted and still be successfully whipped for later use??????? Anyway ANY thought's.... good OR bad are encouraged 😊. Sorry for the long post. @@jakobw135 aquafaba is the liquid that is in a can or jar of garbanzo/chickpeas. It's a very strange and magical liquid. It acts just like liquid egg whites. You can add a little sugar and whip it for a meringue to top a pie or bake it low and slow for pavlova or meringue cookies. There are so many uses for aquafaba those are just a couple of my favorites😁

WOW!!! My Mom is diabetic and had been having a bad time. Especially with her eating habits. My sister has been taking care of her and have been doing the Keto diet. My sister says that Mom's energy levels and mental clarity has benefited from more good fats in her diet. I intend to make this delicious sounding recipe for her when I bring her home next week. I am going to see if I can incorporate it into her diet on a regular basis. Thank You very Much!

yes it is expensive. If you find using cashews too expensive cut the amount of cashews and add extra coconut fat. But make sure u do add some cashews it helps make that yogurt so much better :D

I am so happy 😊 you posted this recipe. I am aniflacticly allergic to milk, milk products and whey. I had a bowl of cereal one day when I was pregnant with my 2nd son and it put me in the hospital close to a coma. Of course this was before I knew it could kill me, the stories I could share 😉...lol. Anyway I live for a huge bowl of coconut yogurt with a banana and a dollop or 3 of strawberry preserves but it's so expensive I don't have it to often. Other yogurt making recipes are a such a long complicated process that it's a turn off...again thx! 👍

Connie, thank you for ALL the time you've spent perfecting such amazing recipes AND sharing them with us. I really appreciate how you present them and explain everything in detail while you're making them. Could one use rejuvelac in place of the water and probiotics? Or what amount of rejuvelac could be used to replace the probiotics? Would vegan lactic acid powder work in place of the probiotics and how much? I'm also thinking of using coconut cream instead of the cream from coconut milk.

Coconut cream with mangoes are a delight. I felt the taste of yoghurt in my mouth before i fell asleep yesterday, and I am determined to make coconut yoghurt! To have with fruit! It sounds amazing with muesli too....

I’m going to try this! I’m glad I saw this because someone else said to use whole can. They didn’t say just use the fat part. I have 30 billion on my capsules. So I should use two of them I guess. That’s great.

That looks really good, Connie! I've been on a yogurt making kick recently, using my 1970s era yogurt maker. Mostly soy yogurt lately, but this is added to my list! Might make it this weekend if I have any cashews left since I'm almost out of yogurt as it is. Thanks for posting!

I see you using the regular spoon. That could compromise the probiotics. It’s best to use a wooden spoon. I will be trying this recipe thank you

So far I've tried this with the soaked desiccated coconut that I meantioned. I really love the flavor but it's very pulpy. Blends up beautifully after its been fermented and refrigerated. I'm in the middle of using almonds. (Not my favorite), but I already had almonds soaking. next I think I'm going to try coconut "butter". Then of course the cashews. I saw a recipe where they used 2 cans if coconut milk, probiotics and let it ferment that was all but that one mighty be way too much fat.

i am going to give this recipe a try, however I will replace the cashews with either coconut butter or soaked desiccated coconut. Which do you think will work out better? I live for coconut yogurt. I don't care for the taste of soy and I feel like the nut alternatives can sometimes be a bit heavy and can have this weird almost slick like mouth feel that makes it better for cooking than eating.

Clarification please.....if you start with plain yogurt do you still need to add the probiotic? Also....after the fermenting process...is the yogurt less sweet and coconut(y) and more tart like Greek yogurt?

if ur using yogurt no need fro probiotics or useless :D this mornings batch I used some leftover yogurt and 1 probiotic :D. It has a nice Greek sour taste yet still a little coconuty but oh so good :D

@towardsthelight4919 I’ve used half a cup in my recipes with soy and almond milk. Once you have a yoghurt culture you can keep using it to make the next batch. She says a couple of spoons in a previous comment:) I don’t use cashews either as they’re high FODMAP Hope this helps

Connie, thank you again for sharing this recipe. I had tried coconut yogurt, cashew yogurt and soy yogurt before. The combination of coconut and cashew makes something better than each one those yogurts. BTW, I think you forgot to mention how much cashew goes into the the mix. I assumed half a cup and the result was very good.

You mentioned adding leftover yogurt, or add probiotics. If this is a vegan recipe shouldn't you Not add regular yogurt? Did I miss something? BTW, I Love and Use Grace coconut milk all the time!

Hi Connie. I tried the recipe. Put it on a warm place overnight. The coconut milk was very thick and creamy. The cashews where OK. It turned out runny. The lovely taste is gone. I'll give it to the crows. What went wrong?

I saw a recipe the other day for plant base yogurt starters by Maddykoko. I totally thought of you. He took chili pepper crowns and put them into a cup of milk (he boiled it first but he said that, that isn't necessary). He covered the milk let it ferment overnight on his counter. It was ready the next day to use. No expensive probiotics, no need for leftover batches, no nuts, no expensive canned coconut milk (unless if course you want too) just your favorite plant base milks. You should check it out 😊 Btw...my new favorite"Greek" yogurt is now Connies Greek Cashew and Coconut milk yogurt 😉😁😁😁

yes I have heard of the pepper caps :). I don't even use the probiotics anymore I just take some of my older yogurt and add it to my new batch :D And thank you for thinking of me!!

Sometimes I'm in between pay days or shopping trips and I don't know about you but I don't always have the will power(or desire 😉) to wait until the next shopping trip to pick up then make then wait for fermentation then wait for fridge time to have yogurt. I always have coconut milk on hand bc that's all I can use. Anyway this is just one of those handy facts that I feel like all vegetarian's and vegan's should know about. I feel like it goes hand in hand with that Nomads Nutrition. Great food storage info. Some stuff is just good to have locked in the back of your mind for long term use or short term use when in a pinch especially when healthy isn't something that your willing to compromise on. With tidbits like this that get passed on from one health conscience person to another you don't have to! 💪😊

can someone make the yogurt and freeze it as in if I make it towards the end of the year can I freeze it and thaw for winter

you should be able to normally people consume their yogurt. But freezing it might change the texture... like make it runnier. but yes you can 4 to 6 months maybe

you can use almonds but they might be a little gritty. cashews work the best

Greetings Connie, I have been watching so many videos for creamy yogurt and you of course have them all topped, yours have body to it, I cant wait to try it. I just have to find where I can purchase coconut milk with high fat. I just may have to order online. Iam excited. Thanks again

Just prepared the ingredients and put it in the oven wrapped in a plastic bag, towel and I left a container of hot water in the oven next to it. Fingers crossed🤞🏻
