Watermelon rind 4 quarts water, boiling 2 c sugar (you can use less or more, its up to you) 2 tsp of cinnamon 1 tsp ginger powder Peel off green rind of watermelon, and scrape out a lot of the pink of the watermelon. Slice watermelon rind into any shape you want, she did 3-4" long and roughly 1/2" wide strips. Set aside in a large bowl. Bring 4 quarts of water to a boil. Whisk all together spices and sugar. Stir spice mixture in water until sugar dissolves. Carefully add in rinds so covered with the water (she put in about 18 cups of rinds) Cover pot with lid AJAR (or it will boil over), turn to high, bring back to a boil. Let boil for 5 minutes. Remove rinds and repeat the boiling with any extra rinds if you have extras. Strain all well. Place on trays single layer. Taste, if you want sweeter, sprinkle sugar on top. Allow to cool down before putting into the freeze-dryer. Freeze-dry for about 24 hours with drain valve closed. IF you have too many that don't fit on the tray, just freeze them and freeze-dry them once the others are done. Put all into mason jars. Wipe off the rim with a dry cloth. Seal with vacuum sealer. IF eating within a year, no oxygen absorber needed. IF storing over a year, add an oxygen absorber. Can this be dehydrated instead of freeze-dried?

Thank you for all that you do!! In case it’s helpful I wrote up the instructions as you were going along, the only thing I wasn’t sure was how much rind you used but i guess about 8-10c: Watermelon rind candy - freeze dried 4 quarts water 2 cups sugar and 2 tsp cinnamon mixed, bit of ginger Bring to boil ensure all desolved Add rinds Bring back to boil, once boiling time 5 minutes Taste, balance sweetness with pinch of salt if needed Freeze dry - will take about 25-27 hours

My granny used to can "Watermelon Pickles" where I think she used sweet sauce + red hot candies (they were naturally red) or she made them with "Mint" and they were green. That might be great as candy, maybe like Freeze-Dried Watermelon Skittles "sort-of".

My mom used to make watermelon rind and orange rind candy look up those recipes It’s the same basically (I think) but you let them either oven dry or air dry I can’t remember. Look for citrus rind candies. Southern recipe. No machinery needed.

There is a difference in freeze-dry and hydration fruit or vegetable that freeze dry crispy than hydrated rubbery like. Thank you sharing your treat recipe. I invest a freeze dryer machine.

I've never had watermelon rind candy, but my most favorite preserves are watermelon rind and figs... they were both winter breakfast favorites with homemade biscuits in fifties and sixties sw mississippi...

👏👏👏 oh my gosh growing up we kids and there was 10 of us in the family, we would eat so much watermelon that my mom would always tell us that we’re going to have watermelon growing out our ears😂😂😂 We learned how to master spitting out them seeds!!😂 It has been about eight years since I’ve had a garden but 2025. It’s gonna be a big garden outback! Pumpkins, watermelon, the carrots, the onions! 👍 I also purchased a food saver vacuum, and I’ve been preserving some food and purchasing in bulk! Nothing fancy nothing way out there, just making sure I’ve got enough ahead if the shelves get a little bear😊 😍 what a great video thanks so much for sharing🫶

I would've never thought to freeze dry them! I have canned pickled watermelon rind... and I have dehydrated it for gummy candy... never ever crossed my mind to throw in the freeze dryer!

I pickle my watermelon rind and waterbath it according to the Ball canning book, it's a sweet pickle with the same spices. I've also made preserves with rind. I hope this helps.

I would need to put them in the pint jar because I know dang well whatever size jar I put them in when I open them. That’s what’s getting eaten. My husband and a few friends would probably enjoy them also so they’d be gone quick.

Awesome recipe here! When i was young someone use to tell me that the white part and rind of the watermelon would make me sick🤣 I thought they looked like cinnamon apples but churros are great too! I’m a diabetic but my son is eating healthier. Maybe I can use an artificial sweetener!? You said do whatever 🤣🤣

This looks nice. 😁👍 Most of our rinds go out to the animals, and we do pickle some. 1 of the cousins boils some sugar cane out, and does rinds in that syrup, and makes 1 freeze dried batch as candy. I'm sure she has never added spices for more flavor though. I'll have to direct her to this video. 😁👍

I was thinking, if I can determine what ingredients to use that are on Cheetos, I could make healthy ones! What makes Cheetos crunchy is the tree wood they add to it, but as crunchy as the rind is after freeze drying, could make a Cheetos, similar to the processed kind. Also pork rinds ingredients could be put on watermelon rindsl too! Make it healthy to! Any processed snack that is crunchy, watermelon rinds could be used. instead wood or animal skin and flash frying with oil, you simply freeze dry it! Use the çorrect ingredients to get the same flavor. It's all about flavor and crunch!

My question is, how did you keep track of the ones you dried with the extra sugar! It looked like they all got mixed up! This looks great and I am saving your watermelon videos in case I freeze dry some. I buy my melon at the store, and so far eat it all (except for the rind). But, the candied watermelon rind looks good! Maybe with or without being freeze dried!

How much is the freeze dryer with the discount? Do you also have a discount for the automatic vacuum sealer and the packets that go into the jars? I never canned before, but I have dehydrated lemon skins! I'm an apt dweller, so space is scarce! I don't know where I would put a freeze dryer in here! What are those packets called? Love and Light!
