The cutting technique is also import. If the impact on the cutting board is soft, the knife stays sharp.

Where I worked they had these Ecolab cutting boards...they were hard AF... destroyed the edges on my Japanese knives... oddly the western brands were okay... started bringing in my own synthetic rubber board...a hisoft... problem solved... Anyone having edge retention issues really does need to look at the cutting surface they're using... Great work Vincent... keep them coming...

Yes...so great that personally agree very much with your ideas and guidance ...I thank personallythe best cutting board material is hinoki cypress .

Thank you! I never even heard of glass cutting boards. Another one that BAFFLES me is granite! Granite?? That seems silly times ten to the 5th! 😨

Vincent, aren't the softer cutting boards harder to clean since the board can get scratched and bacteria can hide?

Wooden cutting boards are naturally anti-bacterial. But like the man said, you have to resurface the cutting board more often.

How does the cheap plastic board compare to a hinoki board? Is it any easier on the blade edges?

End grain. also check the type of wood that it is made out of and try to avoid a real dense (hard) wood

finish sharping my knives 800/1000 #6000 #8000 #160000 Feels good.... Me cuts springonion, chives or onion..... gets dull so fast omg...
