I agree, my favorite way to use zucchini is on a hot grill. Seeing how I have struggled to grow cucumbers this year, zucchini is great in salads. I use a lot of zucchini by canning zucchini relish, I get to use my sweet peppers and onions too. The other nice thing about the relish is our friends and family enjoy it too, so it is a nice little gift. I am making another batch soon, going to add some fresh cayenne peppers in a couple jars for a friend. Sorry I missed the live stream. Stay Well!!!

Not sure if anybody mentioned it, but I like to eat beet greens. I sauté them in butter with a little salt just like Swiss chard or spinach. It’s really good.

Sorry to miss the live feed. Right now all my Cherokee purple tomatoes are coming in. I want to make either frozen chopped/stewed tomatoes or a sauce with them, even though they aren’t a paste tomato, I just love the flavor. I am freezing in 24’oz mason jars. What’s a good technique to do this? I want to keep it as simple as possible. Should I Blanche and remove skins? Freeze first to drain the excess liquid off? Do I have to remove all the seeds? Etc.

The easiest way to freeze tomatoes is to wash them and then freeze in a freezer bag. You can blanch to make removing the skin easier later. You can slice and freeze, either removing seeds and pulp or not.

Right on! I look forward to seeing how your lacto-fermented cherry tomatoes turn out. Specifically I use my sun golds and sweet millions when I ferment, but I’m sure they’ll all taste wonderful. Sometimes I add basil and garlic chopped up into the fermentation as well. ENJOY! Thanks for all of your help in the garden 👍
