No reply? It sounds like he's starting the count from the start of the first pour so on the 30 and 60 second Mark's but really I don't think it matters much or there's benefit to actually waiting longer after the bloom. Lance Hendricks recipe calls for an up to 2 minute bloom!
Have you experimented with swirilng the coffee between blooms or does that not work? And what temperature (in F) are you brining the water to? 195-205?
Hey! Sorry for the late replay, missed your comment. When swirling, you always raise the extraction yield of your brew. If you want a stronger cup, try it out! Balance the swirl out with a slight courser grind to find new ways of extracting your coffee to perfection. Good luck on your brew journey!
Hey! Thats a tricky question, what grinder do you have? So the best thing is to follow the recipe and then use the timer to set your grind size. Try to hit the 2:45 time mark for the total brew time. Set your grinder to finer or courser to hit that time! Hope that makes sense 😌

Most of this sort of video is some pretentious dork rambling on for a quarter- or half-hour when the video topic is just like 'Here's the pourover technique I've been doing lately.' and IT DOESN'T TAKE HALF AN HOUR TO POUR SOME WATER, LANCE HEDRICK. ...Anyway, appreciate it.
