(I’m a ancestral foods based Nutritional Therapist) you are very right about the starter and the celiac :) It’s amazing, I just took a Tbsp of my rye starter, fed it 1/2 cup of brown rice flour (milled in my Mockmill) and wow did it rise like never before! So beautiful! And just like that! :) I’m rising a GF boule atm. 😘😘
I couldn’t use buttermilk because my wife cut out dairy for our baby. I couldn’t find plain kombucha. So I went outside and kicked some bushes, then waived the jar in front to capture some yeast. It worked! I started on Monday, today is Thursday and it’s already souring (day 3). The size increased by about 50%. There were some air cavities in the bottom, and a tiny bit of clear liquid on top. When I stirred, it smelled like my homemade cider while it’s bubbling. When I stirred, it was pretty dried, so I added more distilled water to get the pancake batter texture. Before I stirred, I noticed 3 small white fuzzy spots on the sides of the jar, above the flour mixture. I used a spoon and scraped off all the sides of the jar above the flour mixture. Will it kill myself and my family?
It is important that you use cultured buttermilk. However, if you can’t find or cannot have buttermilk you can also use other ferments. I have successfully made sourdough starters with yogurt, kefir, and kombucha. Just make sure to use plain varieties and nothing with added sugars or fruits. 😊 ~ Anja
Hi Anja. To tell you I made my starter with Kefir and worked wonderful. I have it now in the refrigerator with lots of flour as per your suggestion because I am planning to bake next week. I am so happy I found your channel.

So I made the starter for gluten free diets I have to use all of gluten free flour or can I mix with half organic If not do you have a show with gluten free
If you use all of your starter except for the small amount left on the sides of the jar like you had after using a cup of starter. How do you feed and keep it going?
I probably would have thrown it out if it started to smell of alcohol, but now I know to keep going and hopefully it will work itself out. So looking forward to trying this!

Hi, thank you Ania for the efforts you put to bring new ideas. Personally I tried gf sourdough starter with 100% whole oats and yogurt. It did work and after few days kind bubbles filling the mixture however it didn't double in size .I used it successfully to make 100% oats bread. The result didn't give open crumbs but it was a successful yummy bread. Thanks again for all your recipes 🌷🌷

About 40 years ago I made sourdough starter using potato water ... boiled potatos for dinner & used the cooking water ... ratio was 1 cup flour to 1 cup potato water Thinking I might re-experiment with this but gluten free ... would almond flour work I wonder 🤔 ... time will tell 😊
Please make more gluten free sourdough recipes. My husband has Celiac so I have to cook without gluten due to possible cross contamination. Loved this one and plan to try it out!

Synchronicity! I have not experimented with GF oats, buckwheat, teff, quinoa etc but I imagine this method would still work with these grains that you can mill at home. Let me know what you learn, if you do 😍 ~ Anja
Help ... made this starter 4 days ago and when I checked on it this morning there was a colony of mold growing on the surface ... this has happened with every other gluten free starter I have tried to make ... jar and spatula both were cleaned in hot soapy water at the beginning, covered with beeswax cloth and only looked at it once a day ... was nice and bubbly this morning but molded ... will have to start all over.
There are a lot of reasons for mold developing on your starter. It could also be your batch of flour. @@OurGabledHome Thank you so much for the info! Currently we have a GE Cafe dual fuel 30” stove/oven and I love it. Its my 3rd stove in 19 years. I cook/bake a lot. We bought all of our appliances around the same time in 2013 and all of them have been replaced in the past few years except the stove which is still working great but I am wondering if it will have to be replaced as well. Appliances just don’t last as long as they used to. The prices on this website are very reasonable. We paid almost double for our GE Cafe, counter depth refrigerator last year from a different website as no one had our refrigerator in stock. Wish I knew about this website. Thanks again!
