This is my method for a thin and ultra-crispy Tavern Pizza. It has a crunchy bite that is hard to forget. I develop this recipe following a similar method used to achieve a Roman Scrocchiarella and adjusted it for this specific style of Pizza. When making Tavern (or Bar) Pizza, I don't really want to complicate things. Anyone should be able to make this at home so I used a simple dough method with low hydration easy to manage and with a long fermentation in the fridge which boosts the flavor and the rising agent. I also baked this pizza in both a domestic oven and in an Oooni Koda 16.
I fell in love. And I ate a lot. :)

Looks very tasty. Thanks for this recipe -- and wonderful topping choices. Have you ever tried a Tarte Flambée or Flammekueche with crème fraîche, thin-sliced onions and lardons?

This is a pizza anyone could make and no need of fancy ovens to bake it! Obviously the Koda 16 produces a better cooked crust in less time with those yummy burnt edges, but I also tested this dough with my Forza Forni Italian Stone, and it didn't disappoint! A crispy base all around with that intense crunchy bite that's hard to forget. Thoughts on this bar pie? What other pizza style would you like to see on the channel? Gorgeous. Might not be a popular opinion, but I'll take the lift /crunch you achieved on the hot oven stone (which you lovingly draped with Parma ham) 😍over these ubiquitous $600 Ooni ovens which all came out looking burnt and overly flat with this particular dough. That first one though, was a thing of beauty imo, like a pinsa.

Amazing stuff as usual. Food/Film-art. Love it! I don't understand why you only have 9,000 follower... Hang in there (be patient) - you just need a bit of a bump and your channel will explode. My current favourite pizza... Basil Pesto made with walnuts... (no idea what pine nuts taste like - deadly allergic). Chopped artichoke hearts. Chopped grilled blackened chicken breasts. Your preferred cheese on top. A bit of freshly cracked black pepper.

It reminds me of a pizza my wife used to order in Jacksonville (before becoming vegetarian)! I tried it and it was actually very good even tho Italians are like “why chicken on pizza???” But I thought the combo was pretty good! Thanks for watching:)
