Hello There Friends, Today I'm going to show you how to make a Fish Dish for someone who may not like fish so much! We are lucky here in Florida to get Swordfish, but wherever you are in the world if you have access to Swordfish you should really try this recipe! REMEMBER Fresh Fish Does NOT SMELL! Just tried the seafood cake today, made a double receipe to have something in advance. 31 year of experience wasn't enough. All the cakes are gone and I only saw happy faces. @@SectionSixteen what is the point of beating a timer? I worked in very nice kitchens for 12 years and things had to be fast. Salads drop and you had about 8 minutes to get the meals out. but you didn't have to do it like a moron. I knew what I'd use on a given day in a given restaurant. I'd come in early and prep. Depending on my equipment, things went slower or faster. One place I worked that might have been the hardest kitchen, it was chitless... Orders were just called by the expediter and everything had to be there. I learned to make codes for myself. When I left... The chef chased me down to invite me back. but he couldn't guarantee getting paid on time. It is impossible to live like that. 25 years out of the kitchen I took a job in Spain to help a guy who broke his arm and couldn't work. I cleared his kitchen of cockroaches, re-created safe food processing, and made his restaurant better. Then he stopped paying me. Guess what happened.

Chef Jean-Pierre, I appreciate when you introduce foods that we might avoid in the grocery store...Swordfish is definately one that was overlooked. Thank you for sharing your gift of teaching. Your delivery and care for content is organic, and it sticks. Funny, I made the Chicken Milanese last night... This is the swordfish version, no?

One think I try and watch and figure out is how you have that kitchen configured. I'm redoing a place I just bought and I'll be spending a lot of time and money on the kitchen (not a pro, just like cooking), I do like that big drawer for all the odd sized ladles, mashers, etc. No more of the potato masher stopping the drawer from opening.

Chef, my wife and I made this wonderful recipe last night. Noticed on page 2 of the printed recipe for the Lemon Caper Sauce, it repeats the stock and zest and adds "cornstarch." I think it's a typo since cornstarch is not listed as an ingredient and I didn't see it in the video. Or is that to thicken it up, if needed?

ah, a great dish... I use a very similar method for my Parmesan Encrusted Sole with a Lemon Caper Brown Butter. The only thing I do differently is up the amount of Parmesan in the breadcrumbs and I cook the fish in the Butter before using it to make the sauce right in the same pan with lemon juice, shallots, and capers.

As usual, always a pleasure to watch you Chef Jean-Pierre, the dishes are nourishing and some of the ingredients can always be substituted to suit your own taste. Serving a lemon sauce with the fish is just fabulous. It was a good video on crumbing as well. It is important to dry the fish with the flour it just works perfectly. Made these for friends tonight with the sauce. What a hit. I had three steaks left over and they were immediately grabbed up for tomorrow. Same with the sauce that was left over. And my friends had never had swordfish so this was a very special dinner for them. I was so pleased with the results. Thank you, Chef Jean-Pierre! Once again you are the greatest!!!

I....am going to move to Fort Lauderdale or whereever Chef Jean-Pierre is, so he can cook for me. I don't know what his wife will say but, it's only the cooking......... Swordfish, eh? Fresh fish is so hard to get but in Florida.... and with the lovely, happy, handsome face of Chef Jean-Pierre, my dying days would be made.

But I've never heart of Italians eating Swordfish ! Do they really come that close ? I always avoided swordfish because I thought that it’s a dry fish but this is a great recipe and I’m definitely going to make it especially when I’m at my home in the Mediterranean. Thank you chef Jean for another great recipe.

We had the same response in growing ups days too but mainly because the cook, our mother, would over cook the fish. She made Orange Roughy mostly but fried in the pan too long.

I had swordfish back in the 80’s when I visited Portugal. Dang, the texture of that fish was like meat😳. I will not attempt to cook it myself, I rather go to a restaurant and enjoy the flavours🤷‍♂️

My dad always says "butter makes it better." THE LEMON JUICE! HAHAHAHA! I've heard you talk about this incident so many times and its so funny to see you put your hands on the lemon juice several time but you never think to use it! I've done the same thing myself many times. The important thing is that it didn't hurt the dish.

I have only had it once at a restaurant, I 🤔 think that it would have been Much better If the "Chef" had actually used some Butter and hadn't Overcooked it and Burned it To Death to The Point That it Literally Sucked All of the Moisture out of My Mouth. But Hey maybe 🤔 That's Just Me?!

When a kid I hated fish. The only way I would eat it was when it was swordfish. My mother would bring some fresh swordfish every now and then to have me eating some fish (on friday's). She would cook it kind of 'meunière'. I loved it but that 'milanese' touch would have made my childhood even happier!!!

Just made this dish, having never had swordfish before. Incredible! Regrettably I didn't have the arugula salad on top, but I will next time. The fish was texturally pleasant, and the panko provided a great crunch. The Lemon Butter sauce was absolutely killer. Excellent all around

Very interesting, i've never had swordfish that way, I didn't bring my boat to florida this year, planning again next year, I commercial tuna/swordfish in north east, I can't sell fish in Florida, Last year I was desperate to give chunks of a 440 lb Pumkin Orange swordfish away. Next season If I catch Ill give you a loin to make some roasts, Im 30 min north of lauderdale . Thanks for the great video, I generally prefer to sell fish and eat steak, but fresh sword is one of the best!

Isnt it a bit silly to state that one does not like fish, given that fish can taste in so many different ways - even if you prepare them the same way ? Try something really simple like frying the fish on a pan with a "carefully" measured amount of butter and a little salt. Tuna, Salmon, Herring, Cod, Plaice - a wide varity of flavour and texture.
