I just eclipsed 1100 ELO, playing mainly the Scotch game when I am white and the Pirc Defense on black, just as you do most of the time. :D
If you play e4, don't play the Exchange French. Yes, Kasparov and Morphy did play it but as Grandmaster Paul Van Der Sterren writes its like Moses "beating water out of rock." It is super boring. I would recommend going with 3. Nc3 inviting a Winawer, a Classical, or a passive Rubinstein. Against the Winawer there is the fun sideline called the fingerslip variation and against the Classical, The Alekhine Chatard Gambit is good.
You always looking for tactics but miss the meta level. At 10:10 mark knight f6 forks and wins the rook. Those the moves that really moves you up. Or just move the queen up to f6 and make him resign. Edit: oops. Paused to say that too soon haha.
1500 rated French defense player here. Trading early sure is a way to just have a game but there are some fun lines that don’t require a queen blunder for advantage. The terrasch is an amazing one for example and besides 3 first moves has very simple development afterwards
