You don't serve guests with long finger nails or dry skin flakes on your damn hands. Physical contamination is a huge no go.

They work with alcohol which strips oils from the skin, oils that protect the skin, and a lot of acidic components that also strip oils from skin. Not to mention they're washing glasses where, you guessed it, soap is used and soap strips oils off of skin. Dry, cracked fingers are an inevitability in that profession. The only way to prevent that damage is to wear gloves. Healing that damage takes weeks, months even. If a bartender doesn't have dry, damaged fingertips or cuticles, they haven't been a bartender long, or just pour tap beer and grab bottles.

@@grayden4138 Sir. I have worked at bars for the majority of my adult life. I work the bar on the slow days and my coworkers on the busy days. None our hands look like that. And we all use gloves because physical contamination is nasty. Also our manager checks to ensure all our nails are trimmed every now and then. Grooming standards.
