Made a Greek cucumber salad last night and the combination of fresh watermelon, fresh cukes and fresh mint hit your tastebuds just right. Made me think of Matt's infamous "Gosh, that's good!" I'm like you, everything I know about canning, I learned from my Mama and I'm 74 years old. I have never read the instructions from the FDA.Never gotten sick from anything I've canned. Prayers for Granny. She is so sweet.
Oh my!!! I adore Granny! She’ll be in my prayers. Hopefully it’s just a bad infection that’s stubborn cuz of her age and stuff. I’ll be thinking of all y’all. I think the book idea is awesome. Since I was an anthropology major, I love reading about culture, and since it’s partly my culture , I enjoy it even more! I have a question: we used to sit on the porch and snap green beans…what kind of beans are they? I could make a whole meal outta those kind of beans! And I love hearing the cicadas in the background. They have different broods…the most famous is the 17 year cicadas and they have red eyes! 17 years they live underground and come out to mate and have young and then back to the ground! I wonder how they know to crawl out of the ground and up the tree? I guess they have really good batteries on their little cicada alarm clocks! Lol!😂
@@CelebratingAppalachia I don’t know, we didn’t grow them ourselves, but they were green, long and skinny. We usually broke them in thirds and cooked them till well done with fat back. Always better on the second day. (Probably the only pork we let sneak it’s way into our food)!
Tipper, I was always spooked out about sticking my hands under leaves to get cucumbers, squash, etc. So, I started carrying a hoe with me and would put it under the leaves and pull them back so I could see the cucumbers and look for snakes at the same time!! Prayers for Granny! When she gets to feeling better, I would sure love to hear her harmonize to a song with Paul. It’s fabulous!! 💔🙏🏼🐾🙏🏼💔
Tipper & Matt I truly enjoy watching the 2 of you. You can see the love in Matt’s eyes when he looks at you. He has the best smile. Tipper the same is for you towards Matt. I can tell he like to give you a hard time like when he was talking about the leaves. It’s great to see all you are harvesting. I love canning also and i guess I’m a rebel canner also but it’s how I was taught and I’ll continue that way. Many prayers for Granny and all of the family. ❤🙏

You are such peaceful folks and I love to sit and share a popsicle with you as you share your life with us. I love to hear you read from one of the many wonderful books you have discovered. Some of my favorite videos are those with no conversation but just the sounds and pictures of nature around your home. Many nights I go to sleep with the peaceful videos you have and those of your family singing. I just love you all.

We use to can even freeze … I would use my food processor and blend until it all is liquid….yes seeds and pealing. I seasoned them with lemon juice, salt and I blended onions and celery, carrots up with the tomatoes also. Cooked until done and if freezing, we would just it cool and put in freezer bags…if canning , we would put then in hot jars and seal them with hot lids. Always have your water hot before putting the hot juice in the water bath. Bring to a boil and boil for 15 minutes. It is like a v8 juice.
I absolutely love your videos, Tipper. I’m not from Appalachia, but I find the culture and foodways so fascinating. Some of my favourite food to cook and eat. You have the gift of story telling and I could listen to you and Matt talk about gardening and pickling all day long! Love from way up north in Yellowknife, Canada!
Those golden varieties of tomatoes have always produced really well for me. I'm glad to hear you like them too. Gosh, I'm so sorry to hear the Granny is feeling poorly. My hope is the doctor can provide some answers and some relief.

Wonderful tomato harvest! Aw no... I certainly will be keeping Granny in my prayers. After my father in law passed, my distant cousin passed this week, he was only 60. Lord Jesus Christ, be with Granny and Paul and all the Wilson's and their kin. Assure them of your love and presence, guide the physicians and their focus. I'm very sorry to hear that Granny's not well. Y'all are having a rough time of it this year. I hope they can determine what it is and that it can be fixed without too much difficulty. I know you must be worried. Holding all of you in my heart & prayers. My mom not only used the "open kettle" method when she made jam (though I'd not heard it called that), but she used any kind of glass jar and sealed them with paraffin wax. I started out using the hot water bath method not because I thought it was better, but because it was easier! And once you opened a jar, there was a lid you could close. And since I started out doing it that way with jam, I just naturally kept doing it that way for canning. The look on Matt's face when you talked about burying the cabbage made me laugh so hard! You two are good for me.

I am just sheltering from a thunderstorm, just after I put the washing out. My garden has really got away from me but I can't do what I used to. I have got my fingers crossed for Granny. She reminds me of my Gran and I would love to sit down with her and some crocheting. Rain stopped,sun out, everywhere steaming so I will put my wellies back on. Take care.

My goal is to preserve something every day, even if something small. Our green beans are kind of crazy right now so yesterday I made a jar of pickled green beans for the fridge. All I had time to do because I had a granddaughter spending the night. But it was something!
I’m so jealous of those beautiful Cherokee Purple tomatoes 🍅 ❤ it’s 90* here every day and humidity is terrible, my tomatoes have been done!…..Sorry to hear Granny hasn’t been well, will keep her in my prayers Hope y’all have a good week ❤
Tipper, we have a few hundred customers that purchase vegetables from us by the season. One year when we were also attending farmers markets as vendors, we planted ten thousand tomato plants in one of our fields. We learned a valuable lesson that year. That was to pick all of our tomatoes including our heirlooms, when they got the first hint of color (blush), then let them finish ripening indoors. That way we got to eat them and not the critters such as deer, raccoons, etc. Tomatoes are a crop that will continue ripening off their vine. Most vegetables won’t.
Your garden and yard looks so nice, Tipper, from all the hard work that you and your family put into it. Once the shelves are stocked again it’s a good feeling having food put up for the winter and coming year. You and Matt look so cute together. I will be praying for Granny!

Prayers for Granny and you all. I have fond memories of making egg baskets with the Popsicle sticks from all of us kids. I was one of 36 grand kids. Mom had 6 brothers and 6 sisters, My Dad was from West Virginia he had 7 brothers and 2 sisters. They were born in the 30s and both raised on large farms. I also was raised on a farm and I miss it. I really enjoy watching you all.

Well... I harvested my potato crop today. I was pleased and I know that Papa would be proud of me for trying. From 6 little seed potatoes I got about 5-6 lbs. of new potatoes from one big pot. Will definitely try them again next year. Your one golden beet makes me think of my turnip crop that I harvested earlier this week. Pitiful. Mostly little purple and white golfballs but nearly half of them seemed to have been infected with some sort of little maggot or worm. Those got pitched over the fence. Yellow squash and zucchini is blooming and starting to produce. Tomatoes are coming along as is the winter squash. Now that Okry, peas and beans....shoot! I think that is an exercise in futility and wasting water at this point. LOL. I'll keep Granny in my prayers. If it's' not one thing... it's' another...and that is the way of life.
I love compost freebie plants. Your garden is beautiful. So much color and life. We've had so many problems with growing beans as the humidity is making the pollen too sticky to be carried off by pollinators to do their work. We're definitely going the raised bed route next year. Our garden has gotten away from us this year. Summer is just such a busy time. Oh my, I just ordered your first. Your second book idea sounds fabulous. I'm so sorry to hear that Ms. Cindy has journeyed home. Father God, on humbled knees. we come together seeking health and rejuvenation over beloved Granny. Oh my, I guess canning is a lot more complicated than I thought, as there are so many options. Yeah, sometimes the flower garden has to be sacrificed for the food garden. I know it's hard to watch it happen, but there's only so much that can be done in a day. Congratulations on your beet! It's a pretty one at least. LOL! My corn was head high and just beginning to tossel*. Last Thursday it come up a storm and the wind blowed mightily. It blowed down about a third of my corn but rained not nary a drop. So I watered again. Some more corn fell over. I was mad at myself for watering. I had weakened the roots on my corn plants. The wind also blowed over my summer squash but it straightened itself up somewhat. Yisterdy evenin it come up another storm. This time it brought high wind and flash flood warnings. The wind blowed and it rained 4 or 5 inches between 8:00 o'clock and midnight. It blowed over more of my corn. But, nothing else was damaged. I was looking forward to some sweet sweet corn but I will be thankful for whatever I get. * or tassel if the word police is lurking nearby!
I'm praying for Granny that she will get to feeling better really soon. Hopefully the Doctor will find something to help her. Praying for your whole family as this has been a hard year for you. Take care of yourselves & try not to over do in the garden. Hugs!
So sorry to hear granny hasn't been well--I will keep all of you in my thoughts. I think for the canning thing, what it comes down to is experience. I think it's fine for you to do it the old way because you have the expertise to know you're doing it right. New canners just don't have that knowledge to lean on and the FDA has to skew toward them. I remember helping my granny can everything when I was a kid (and that would have been the old way); tomatoes, beans, jelly. Unfortunately, I was too young to retain the skill and would be nervous of doing it now.
❤Praying for your Mom!!❤ One of the nurses at my former hospital in East Tennessee used to bring squash, zucchini, tomatoes and cucumbers enough for all the staff to have plenty all summer every year. I miss that since retirement. Also loved Matt's "I have come unfed" comment.

Its nice how you'all tend your yard nice like we do here. That talk about making mayo and such, well, if you got time, well that's one thing, but making supper and pickin and preparing all that is a LOT of WORK! LOL! I think you need to take time to just relax and enjoy all thay ye all done! That's what important like. Marcee, my wife she got some work in the kitchen, but mostly I tend to the yard and we got all day to do that and then we play some dulcimer and guitar with the grandkids to just relax some. It's a nice ol life and we like your channel a lot! Bless!
Im from pa and its so refreshing to watch you and matt share your lives, struggles, victorys and worked together thru it with love and respect for each other. Rare in this day and age at least where im from. Love at the end of the work day you share a popcicle or hot choc and talk about the day. I guess I’m a Rebel canner too I’ve never pressure canned tomatoes, jelly or peppers . I learned as a little girl helping my Granny and Mother can. They never made anyone sick, nor have I. I’ve also dried peppers, onions , garlic etc. and always had good luck. I want to try and do leather britches. Granny did those and they were so good. I love your talks with Matt have working and then enjoying your popsicles. It reminds me of the times that he and I had before he passed.
Try freezing some of your beans this year if need be . Pick beans ,wash beans ,and lay them out to fully dry . Don't break the beans. You can string the beans at this time ,or not . Put beans in a clean double rinsed, air dryed pillow case . Tie a knot at the top of the pillow case, then put in freezer. The flavor is like fresh picked green beans . Won't hurt to try a trial run, just enough for a mess . All the best thoughts , and hopes for your Mom 🙏 .
