I'm frustrated with the judges' description of gingerbread cookies. Sounds more like they're describing a ginger snap. I've been pursuing a gingerbread cookie recipe that IS soft-- that's why it's called BREAD. Ginger snaps, OTOH, are supposed to be crisp and crunchy.
You’re wrong, they are right. Gingerbread is the name, cookie is the actual description. What you’re describing id basically a ginger/molasses cookie, which is close in taste, but not texture

I often wonder how person's forget to put sugar in their gingerbread dough, have to start over from scratch, bake it with only 30 minutes left and decorate in order to display with persons who were finished before them. Is that magic?
